Crispy Coconut Biscuits.

I was given 2 jars of Whole Ground Coconut Paste. No recipes on Google for this unusual ingredient. So I made up a recipe based on several on the Internet. I seems I will get 3 batches from a jar. But what then for what happens to be a very popular biscuit. ? I will try mixing desiccated coconut with coconut oil. For now, this is the recipe I used.
Ingredients.
110g butter, soft
190 Caster Sugar
1 egg
200g SR Flour
Pinch salt
100 g Whole Ground Coconut Paste
Making and baking
Line 3 baking trays with baking paper.
Set oven 170 degrees
Mix sugar and butter, 30 seconds, speed 4, scrape down
Add coconut paste, mix 2 minutes, speed 4, scrape down.
Add egg, 20 seconds, speed 4
Add flour and salt, mix on kneading function until flour is incorporated.
Using an all ice cream scoop , place 12 small mounds on each baking tray, ( 36).
Press top gently with wet finger.
Can top with dried sour cherries, small blocks of preserved ginger, or any small topping
Bake 15 minutes, or until light brown around edges.
Will crisp up when cool
Very easy and very delicious.
Note
Can make a similar coconut paste in TMX.
Weigh equal amounts of desiccated coconut and coconut oil into TMX and mix on speed 8 until a smooth paste . About 1 minute.
A minimum 100g of each is enough for the TMX To successfully blend.

Nice cookies Chookie, of course I’ve never seen or heard of that paste but Mr Google has given me a recipe for it if you haven’t already checked for one.

Coconut paste sounds interesting. DH doesn't like coconut but I think the cookies would taste rather nice. DD is making some Chia and Apple Muffins at the moment. I look forward to tasting them.

Thanks Judy, but this isn’t the same . The one in the jar is very white and has not been roasted.
The good news is that I made some today in the TMX. I mixed equal parts by weight of desiccated coconut with coconut oil. Just made a batch of biscuits to try it our and they are almost the same.

Taste tester, Ral thinks they are better than the first lot. He said he needs to do more testing.

I made these today Chookie and they are excellent. I got 21 from my batch using a medium sized ice cream scoop. I didn't press down just left them in their little mounds and I like them that way. I reduced the sugar to 150g and they are the perfect sweetness for us and nice and crispy. Your method was spot on and so easy.
I used Tenina's coconut paste/butter recipe, I will post it here in case you are interested as it worked perfectly.
COCONUT PASTE - Tenina
400g shredded coconut
Place coconut into TM bowl and blend
3 min/37°C/speed 8
, stopping to scrape down sides of bowl and lid occasionally as required. You will hear the sound alter if there is no coconut being blended.
Pour into a sterilised jar and keep in the pantry until use. It will be quite liquid when you are finished but will solidify at room temperature.

Julie, thanks for the feed back and for Teninas recipe. I really must post the 2 recipes that a neighbour gave me for very simple biscuits. They came from her MIL who is 98.
