Nut & seed blender bread

NUT & SEED BLENDER BREAD
60g flaxseeds
260g activated almonds (used normal raw almonds)
45g coconut flour
6 eggs
100g macadamia oil
1 tbsp each chia seeds, honey
2 tsp apple cider vinegar
¾ tsp bicarb of soda
70g each: pumpkin seeds, sunflower seeds (plus a few extra to sprinkle on top)

Preheat oven 160C,  Grease and line 20x10cm loaf tin with baking paper, bringing paper up 2 long sides for easy removal.

Place flaxseeds into TM bowl. Turbo 1 x 2 secs, scrape around the bowl.
Add almonds and coconut flour.  Turbo 1 x 2 secs, scrape around the bowl.

Add rest of ingredients except pumpkin and sunflower seeds. 
Blend 30 secs/speed 4, scrape around the bowl.

Add both seeds and fold through with a spatula.
Transfer to loaf tin and sprinkle the top with extra seeds, pressing in slightly. 
Bake 40  - 60 mins until done.  Remove to a rack to cool.

This recipe is from the site below.  I found mine took longer than the 40 mins.

I would like to have the nutritional information for this recipe Julie so I wrote to luvele but they couldn’t give it to me.  They did say in the future they hope to have more specific information available for diabetics. Oh well, I tried.

What a shame Judy.  I guess they would really need to get it right but it sounds like they will go that way hopefully in the near  future.

Judy I was thinking the same thing. I will use a couple of apps I’ve got and see how I go. It will be either later today or tomorrow.

I made this yesterday. It is very good with an interesting texture.  I added 100g Dried Sour Cherries.  As we will probably eat it for morning tea, I will next time add a little more honey and some dried Apricots. This will make a very nice alternative fruit loaf.
1 thin slice is plenty.
Lots of chewing involved.
RAL  says needs butter.
Makes about 18 thin slices.

I used Easy Diet Diary to gauge the calories etc. I didn’t add in the seeds for the topping.
Cookie, I would be interested to see if you come up with something similar.  As I would get 18 thin slices, I would divide the amounts by 18 for a slice.

Sorry it’s taken me so long to respond to your workings Chookie, kilojoules are hard for me to grasp, I’m much better working with calories.  Having got my calculator out and working on 18 slices, yes that looks good to me. 56 calories per thin slice and around 4g carbs would be a good one for me. Thanks for going to the trouble of finding out the nutritional values of this loaf and thanks to Julie for posting the recipe.

I still haven't done it, so thanks Chookie. I usually just divide the kj by 4 to give me a rough guide for the calories Judy. I still like calories too-they are less.

No trouble girls.  I like calories also. 
I like the Easy Diet Diary as it is an Australian program.  It takes a little time to get to use it to its full advantage.  But well worth it.  The thing I am not sure about is if when calculating the Carbs, do you take off the fibre.   You can write down your days eating and it will give you the individual nutritional count for the each food.  So say you aim for 50 grams of Carbs a day you can see which Carbs have the highest count.  If you are over,  you can reduce the serving size or replace this food with something else.   Hope this makes sense.

What I learnt when doing Keto Chookie was that if it’s an American recipe, with the fiber (as they spell it) you need to take it off the carbs but the Aussie calculations for Carbs has the fibre already taken off.  It’s all in the spelling of the word as to what you do.
I have downloaded that app but am yet to spend enough time on it to know what I’m doing.  I like making recipes that have done that work for me as I find it too time consuming.
Julie I just google my question for kj to kcals, I find that easier than remembering particular sites.
