Carrot and zucchini fritters

Name of Recipe:Carrot & Zucchini Fritters  (converted from a Celebrity Slim recipe printed in That's Life Magazine)

Number of People: Makes 8 fritters
Ingredients:
1 med carrot
1 med zucchini
4 spring onions
95g reduced-fat ricotta (1/3 cup)
90g wholemeal flour (1/2 cup)
dash cayenne pepper (optional)
oil for frying
Some sort of dipping sauce to serve.

Preparation:
Place carrot into TM bowl and grate 5 seconds on speed 5.  Remove and add zucchini and spring onion.  Grate 3 seconds on speed 5. Add carrot back into bowl along with all other ingredients. Mix for 10 seconds on speed 3, Reverse.
Fry until golden on both sides. Takes around 5-7 minutes all up.
Serve with BBQ sauce or a dipping sauce.

Tips/Hints:
Quantity could quite easily be doubled, adjusting chopping times etc.

Thank you JD, I am hoping to be as Slim as a Celebrity one day, but I don't think that my preference for fried or sweet food is going to get me there  :o

Good work JD - I am aiming to be as slim as a celebrity like, um, say Luciano Pavarotti was at his peak.  I could do that

Made these tonight and they were so easy. Only thing was I don't think the oil was hot enough when I put them in. Reason I think this: they stuck to the pan and were very hard to turn without breaking up. The judges loved them and thought they were very tasty. I cannot give them a rating yet, because I was not happy with myself at stuffing up and I am going to make them again and put some baking paper (Gladbake) on the bottom of the frypan, add the oil, and do it that way. I have done this before with good results as they are alot easier to turn.

Let us know how that works out CP63 - I know people use that method but I never have. The recipe said to spray the pan but I am not dieting so I drizzed some olive oil into the pan (not a huge amount though) and had no trouble turning mine so maybe my oil was hotter.  Glad you liked them though and of course there are endless variations you could use in the way of vegies.

That's not to say I shouldn't be Thermomixer but at my age, who cares ;) ;) ;)  Whenever I've lost too much weight people tell me I look gaunt and unwell so I intend to keep my body a bit on the fuller side then no-one asks me if I have been sick. :-)) :-)) :-)) :-))

LOL - years ago I was fairly thin, then stacked on some weight and moved to a new area.  When I did lots of exercise & lost weight, back to near original weight, people thought that I must have some terminal disease because I looked so thin and sickly.  I thought that I looked good - certainly felt good.

Need to get back to the exercises now the weather has warmed.

LOL - thanks JD - but ATM that skin seems to be stretched beyond belief - would be more comfortable with a few kilos off  :-)) :-))

I made these yesterday and found them very tasty and so simple to make. I had no ricotta so I used Quark and it worked well.
