I always make 2 loaves at a time. I think it's quicker as I'm in the mood, have all the ingredients there, oven's on etc. Last night I made one ordinary and added sultanas, sugar and cinnamon to the other. First time I've tried that, and I think the fruit loaf should be taken out a bit earlier. Most of the sultanas taste a bit burnt. I'm thinking maybe I should soak them so they're really plump before cooking, as they're quite dry so burn very quickly.
I'm determined to perfect fruit loaf as it's a staple food in our house. I really liked the Varoma recipe, but the loaf is small, and it's more fiddly. And I hate throwing all that water down the drain - just can't do it in the Darling Downs.
