Fruit Toast

This is based upon the Basic Bread from EDC cookbook and Hot Cross Buns by Winosandfoodies

100g Whole Wheat Grain
300g luke warm water (1 1/4 cup)
20g fresh yeast or 1 sachet dry yeast or 2 tsp instant dried yeast
1 tsp salt
400g Bakers Flour
20g Olive Oil
1 1/2 tsp ground cinnamon
1 1/2 tsp ground nutmeg
1/2 tsp ground cloves
3 tbs sugar
1 1/2 handfuls sultanas

Place whole wheat grain into  *:.  Mill for 1 minute on speed 9 firmly holding piece of cardboard over MC hole to prevent flour storm.
Add water, then yeast, salt, flour, oil, spices and sugar.  Mix for 5 seconds speed 7 to combine.
Set dial to closed lid position.  Knead the dough for 1 minute and 30 seconds on interval speed.  Add sultanas through MC hole halfway through kneading.

Allow dough to rise using your favourite method, until double in size.  Bake for 20 minutes in a fan forced oven at 180 deg.
Be careful not to overcook.  Because of the sugar, it cooks a bit quicker than standard bread, and the sultanas will burn if overcooked.

If you don't have fresh yeast Cathy, how much dried can you use please

The original recipe says 1 sachet dry yeast so I use 2 teaspoons from my Instant Dried Yeast tin.  I'll change the recipe.

Sounds great -like the piece of cardboard trick - might have to cut out a piece of plastic to fit in the lid for long term use !! Ta  :-* :-*

I made this yesterday and even after some silly stuff ups by me, it turned out great.  Nice flavour and really nice toasted.  Will def make again.  Thanks for a great recipe.  :)

I can't take the credit for that idea, I found it here somewhere.  Interestingly, I had to bite my tongue at a cooking class yesterday when the demonstrator had a flour storm while making bread.  I like the idea of a piece of plastic for longer term.
I made this yesterday and even after some silly stuff ups by me, it turned out great.  Nice flavour and really nice toasted.  Will def make again.  Thanks for a great recipe.  :)

Made this today, using fresh yeast for the very first time in my life. It turned out beautifully.  I was surprised it took so long to double in size - I had it in a 50o oven for an hour but it was all worth the wait.  Thanks Cathy  :-* :-*

Perhaps one of those plastic thing a ma jigs that Simon used on 'The Cook and the Chef" for scraping things out of bowls would be handy to stop flour storms. Will have a look on Wednesday. I HAVE ;) to drive past a Kitchen Warehouse to get to the Perth get together. :-))

Please forgive me if this has been quoted before, but in the new Indian cookbook, they tell you to put the lid on the TM bowl, put a piece of kitchen paper over the hole (I used one square sheet) and press the MC down on top to stop the powder from spices from coming out the gap.  I tried this and it worked great, could just see a small circle of the spices on the kitchen paper when I removed it.  I'm going to do the same thing when using icing sugar, flour etc, as I'm sure it will work just as well.  :)

OMG Cookie, I went there the other day  :o :o :o not sure if DH is real happy I know about this place as it is a dangerous place for the both of us!!!  ;D

I don't tend to get a flour storm when I mill grain, get bit of a fluff when I mill sugar though  ??? ???

Thanks for the two ideas, Cookie1 and JulieO, they both sound good.  I used to have one of those plastic thingamajigs - I think it's just a different shaped spatula.  But I never used it and I'm pretty sure it went in the bin when cleaning out the overflowing drawer.
