EDC Blueberry cake recipe OK?
« on: October 13, 2009, 08:43:19 pm »
Hi folks,
I've just had a customer tell me that she had a disaster with the blueberry cake from the EDC book, and is wondering what she did wrong.  It apparently turned out VERY dense.  She's coming over for a cook-a-long with me on Thursday.  I was just wondering if perhaps the recipe has an error, and it wasn't actually her??  Has anyone made it?  I'm too busy with DD's party preparations this week to give it a try, so I'm hoping that someone here can tell me whether the recipe needs tweaking for it to work, or whether the recipe is fine, and so my client actually did make a mistake somewhere along the line.

Thanks
Caroline

did she use plain flour instead of SR?

i know all my disasters in the past year have been due to that (as i make my own GF flour and can never be bothered to have SR flour ready to go, but then forget to add the baking powder lol)

I made this on two occasions not long after I got my thermomix 18 months ago so am a little hazy but I do remember that it was not really a success either time. The first time I made it at my son's house and it took forever to set and all the fruit was at the bottom. I remember thawing the blueberries the next time but think they still sank to the bottom. I always meant to try a third time but there are so many other things to try...

Seeing as how the reviews don't look promising CarolineW, perhaps she could try JulieO's which has received positive reviews.
