Tomato Sauce - No Tomato Paste

TOMATO SAUCE

Ingredients
1kg tomatoes
2 apples (cored)
½ onion
160g sugar
260g vinegar
1 tablespoon salt
1/6 teaspoon cayne pepper or chili
½ teaspoon ginger
½ teaspoon ground cloves
1 teaspoon allspice

Method
Place all ingredients into TM bowl and process on speed 8 for 30 seconds.  Cook for 10 minutes on Varoma on speed 2.  Scrape sides and cook for a further 40 minutes on 100c on speed 2.  Process for one minute on speed 8 (be careful of heat).

Pour into sterilized bottles and seal.

General Tips
You can thicken this sauce by increasing the time.

Thanks again TC - I can smell that cooking - brings back memories of my childhood  - especially the allspice in the tomato and Worcestershire sauce we used to make by the cauldronful.

I have used white and brown vinegar and both have worked out fine.  I have had all these recipes in a file for ages.  it is lovely to find a place to finally share them. 

Thermomixer, you just reminded me to post my Worcestershire Sauce Recipe:)  Must look if there is already one on here.

I made this recipe today to see how different it is from the one in MWOC.  Different but just as nice as the other one. It is deeper in colour and I did have to give it an extra 10 minutes on varoma to thicken it (it thickens even more after it goes cold and it is just the right consistency for a squeeze bottle then) placing the steaming basket over the hole in the lid. Thanks thermoconvert.

We seem to have an abundance of tomatoes at the moment. I think I need to make some tomato sauce.
May all dairy items in your fridge be of questionable vintage.

Just joined this forum & was  :)looking for a plum sauce recipe. Used this one substituting plums  for tomatoes & cinnamon for cloves & using fresh chilli. Seems to have worked well! - thanx! (would add a bit of brown sugar next time).

This is a fabulous recipe!!!  I did a review of 4 tomato sauces on my website recently and my husband chose THIS one in a blind testing. Nice and easy and cheap to make!  Thanks!

How long would something like this last for? I don't have a thermomix yet (hoping that I'll get one in the next few months) but my main motivation behind getting it is to cook everything (well, most things) from scratch for me and my son, I'm trying to steer clear from processed food and preservatives.

Also, roughly how much does it make? Our apartment is really tiny (reason number 2 of why I want/NEED a thermomix), with an even tinier pantry so don't have much storage space - would it be enough for a squeeze bottle, or should I perhaps half the recipe?

I'm currently a big lurker of these forums, and I've been bookmarking like crazy!!

It's been a while since I made it jakodai but I'm pretty sure it made 2 bottles (not huge ones).  I keep my homemade tomato sauces in the fridge not the pantry.  Make a whole batch, you can always gift a bottle to a friend or relative.  We are not huge tomato sauce users and it seems to last plenty long enough for us.

I made sauce today with tomato paste, wish I had seen this recipe first! It's very much like the one I used to make on the stove top without thermie, thanks will be making it next time!
