Ooh, this one doesn't use too many lemons. My new lemon tree is only little and hasn't started producing fruit yet, so I have to beg, borrow, buy or steal my lemons.

I've just made another bottle of this Lemon spread from the recipe as printed . I have assumed that everyone will include the juice from the lemon(s), with the other ingredients. I probably should have stated this in the recipe. Sorry!

So no butter in it? I've always made it with butter... This would be much better calorie wise!

Yes, no butter and only one egg.. Can even make it with sugar substitute. If your lemons are small, use 2.

Hi achookwoman. I am relatively new to my tm (but love it) and wonder with this lemon spread can the ingredients be doubled? I have offered to make a few jars for a fund raiser morning tea for cancer. Also, do you have any idea how long the spread would last? Ta.

Janet, it is easily doubled., just cook it a little longer. Not as rich as other lemon spreads but kids love it. I also use it in the
Lemon Feather cake.
I keep it in the fridge for a couple of weeks.

Great recipe thanks chookie. Used this as a warm sauce over a lemon tea cake. Big hit with the children too.

Wonder, Quirky Jo has a lactose free version which is very nice. It is not as golden as Chookies, but still tasty.
