Salads, esp cous cous, or cold pasta salads
« on: December 10, 2009, 05:49:09 am »
We're amid a stonking heatwave that is driving me insane. I've penciled in a vege night tonight (preferably) but have no ideas since it's gotta be a cold food night. I was surprised to find no couscous recipes here....

Does anyone have anything that isn't overly flavoursome? I have one child who doesn't like lots of flavours, won't eat raw tomato or any herbs that she can possibly remove by hand! The other is pretty good :-)

I am not good with not overly flavoursome.  What about basing it one a rice salad with sultanas, pineapple, green or red peppers (?), cheese, oil and vinegar dressing?  Sure there are lots of simple ideas, but none forthcoming at the moment.  :(

A pasta salad, or potato with bacon and egg in for protein?
May all dairy items in your fridge be of questionable vintage.

I have the recipe for Salad Tabulé which is made with couscous, however has garlic, and herbs, peppers, onions and olives, so possibly not a good idea for the kids! ???

Those extra ingredients are ok in larger pieces, since my big one can then avoid them if she really must. She'll eat uncooked capsicum, but won't touch big pieces of onion or olives. I don't have any recipes for savoury rice dishes. Just wondered if anyone has one of those kind of things really. She'll eat curry and similar things, but it's all of the pieces of food that upsets her - she tries to work out what food is going to taste like (rather than letting her tongue decided if it's good  :-\ ) and thus gets overwhelmed and refuses to try if she can see a lot of things. I'm better off giving her larger pieces so that she can avoid them if she wishes.

I like it too :) I made the WORST couscous with a recipe on Recipezaar last week!!! Discovered that it's a bit of a disaster in the TMX actually. Should've done the flavour stuff in the TMX and soaked the couscous in a separate bowl. Ah well, I'm learning ;)

There is a savoury apple couscous in the Cyndi O'Meara TMX cookbook that we really like.  Although we serve it warm, I think it would be quite nice served cold also.  It has a mild curry flavour and is sweetened by the apple.  Send me a PM if you would like the recipe.  :)
