Made this tonight with just under half a left over roast chicken. It was delicious. Served 3 hungry people with small portion leftover. Served with 6.5 ozs wholegrain rice, pre soaked and boiled on stove.
Made bigger quantity with variation. Used 2 onions with bit of garlic and ginger, 1 leek and 1 red pepper.
Started onions in
then browned in pan on stove, added diced pepper til done. Back in
added 2T curry powder with 2 T cornflour, then 200 coconut milk, with the juice from a pineapple small tin and some extra water as making double.
Added in 2 apples diced and peeled, small tin of pineapple chunks halved, a handful of raisins and a T of creamed coconut hacked off the block. When heated through as per Judys instructions for 6 minutes poured in pot, added in chicken ( we like large chunks) and heated through in oven.
Would make again and the neighbours really liked it too.
