Recipe Review - Gingerbread Biscuits - Festive Flavour

Recipe Name: Gingerbread Biscuits
Book Name: Festive Flavour

Review:  My 4.5 DD was given gingerbread and christmas tree cutters on Boxing Day, so has been begging to cook.  So this morning I made the mixture, popped it in the fridge, and surprised her with rolled out dough all ready to go.  She was very excited.

The recipe was soooo easy, and quite easy to roll and work with after being in the fridge for about 45mins.  I'm not big on ginger or spiced biscuits, and the mixture tasted a little strong for me, so I was a little nervous.  But the end result was delicious - very nice.  Could easily add more ginger or spice to taste. 

Would recommend thicker biscuits if you like them a little soft in the middle.  When they're nice and brown, they'll still be soft in the middle, but if thinner, they'll be totally crunchy.

Thanks Cathy. Your DD would have loved that. We used to exchange the spices for cocoa when DD was tiny as she didn't like the taste of them.
May all dairy items in your fridge be of questionable vintage.

The only problem is that all her baking is not good for my waist.  So far it's muffins and biscuits - far healthier than bought, but still supposed to be treats only.

These biscuits roll and cut soooo well.  They are being cooked and devoured regularly at the moment, so really need to experiment on reducing the sugar.

If the dough gets hard to work, just warm it up slightly.  And if too soft, back in the fridge.

I've found that everybody who eats them loves them - mild enough for the kids, and the ginger lovers enjoy them too.

Gingerbread dough is so " child friendly".I use to make the Delia Smith recipe years ago when my children were small and we had a cooking session with it.Off to find that old recipe.This forum is great for reminding me of forgotten recipes.You never know I might need it one day IF I have grandchildren.

Whipped these up tonight and they are yummy and easy. Served them warm with honey cinnamon yoghurt. Big hit in our house and no need for icing.

Thankyou girls. I only have three JD and they came free with a baking set years ago. But they do the job well. The heart one is a bit bigger than the others and I find the cookies cook longer so I put these all on one tray and do the other shapes on a second tray. Not sure if yours are like that but it's something to keep in mind.
