It lasts forever almost Hally, don't worry about it - it will get used sooner or later, just put it in a sealed container.

Glad you enjoyed it, it sweetens coleslaw nicely.

It has an egg in it Hally so no, it wouldn't last as long as the unused portion of condensed milk.  You would normally use it all before it goes off though - it lasts me no longer than 2 weeks.

I was going to ask how long this would keep but I se e you have already said about 2 weeks.  I wouldn't use that much mayo in 2 weeks and I hate throwing food out.

I was thinking of halving the recipe but half an egg yolk, that's gonna be interesting

I get my eggs from a local farm so they are usually huge but I'm guessing they'll have some small ones hidden away somewhere.  I'll ask and then give the mayo a go.

Yay KFC coleslaw taste. My grandmother always made homemade mayo with egg yolk. My mum is a mayo buyer. So maybe I'll become my grandmother.

    Well the gene is in there somewhere.  Sometimes it lays dormant for many years but as we age, it does reveal itself.

I must admit, I was a little unsure about this mayo, it just didn't sound right to me, but wanting to make coleslaw today and having all the mayo ingredients handy I made some.  Once combined with the other coleslaw ingredients, I found it went perfectly together.    I shouldn't have doubted you Judy.
