DAMPER RECIPE FOR AUSTRALIA DAY

HI THERMOMIXERS,

I HAVE JUST CONVERTED A RECIPE FOR DAMPER  USING MY THERMOMIX. I USED A RECIPE FROM THE BACK OF A BAG OF BAKERS FLOUR .

HERES THE RECIPE I HAVE CONVERTED AND JUST PULLED OUT OF THE OVEN - DEVINE!!! - WHO KNEW IT WOULD BE SO EASY TO CONVERT!!!

I have used the recipe from the back of "wallaby" brand unbleached bakers flour (avail at Coles and Woolies)

BAKERS FLOUR               500gm
BAKING POWDER              20gm
MILK POWDER                  10gm
SALT                                5gm
CANOLA OIL                     15gm
WATER                          310gm

PUT ALL DRY INGREDIENTS INTO THE TM BOWL AND MIX FOR 5-7 SECS ON SPEED 2-3 OR UNTIL JUST COMBINED.

ADD WATER AND OIL (BEST TO ADD OIL TO WATER FIRST AND THEN POUR INTO TM BOWL)

SET DIAL TO CLOSED LID POSITION *:. KNEAD THE DOUGH FOR 1 MIN AND 30 SECONDS ON INTERVAL SPEED ::
.
LEAVE THE DOUGH PEICE WHOLE, OR CUT INTO SMALLER PIECES AND MOULD. DUST WITH FLOUR AND THEN BAKE FOR 20MINS FOR WHOLE DOUGH SIZE, SMALLER PIECES LESS TIME, AT 210 CELLSIUS   (CONVENTIONAL OVEN)         

EAT HOT FROM THE OVEN COVERED WITH TREACLE, GOLDEN SYRUP OR TM BUTTER!!! ENJOY

Good for you jojo. It's a wonder we don't have a damper recipe in one of our books as you couldn't get more Australian than that. Thanks to you, we now have one. I am always meaning to have a lamb chop BBQ, damper and lamingtons on Australia Day but just never get around to it.  This recipe should be put into the Bread section too so that it is easy to find later.

My idea of a damper is when one is all fired up with enthusiasm and then comes another person and "puts a damper" by saying "what a nonsense" or something to that effect... am going to do a image search on australian dampers...

Yeah - That's how I do my damper - in the camp oven - very authentic!  ;)

Good work jojo72 - have made damper in the TMX - but not bothered to put a recipe up.  So thanks.  Actually suggested to a consultant that it would be good to have in demo cooked in a camp oven on the stove - but they didn't think so.  :(

thanks for the positive feedback - I finished my damper off this morning - its great sliced and toasted in the toaster!!!

I should have put an image up - not thinking of the international mix of people on this forum...thanks cathy79 for posting the image, and thats exactly how mine looked, although it was cooked in the oven!!

Wishing all the Aussies a great Australia Day ....enjoy your lamb and seafood on the barbie and don't forget to slip, slop, slap  ;D ;D ;)

I looked at that recipe on the back of the Wallaby Flour too and thought, "I must make that..." and that's as far as I got!  :D
Good on you for making it and reviewing the recipe for us.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Thanks for the damper recipe, just put ours into the oven and can't wait to try it. Now on to my Pavlova next.

My damper recipe only has:
3 cups SR flour
30g soft butter
1/2 cup milk
1 cup water (ish)

It isnt a TMX recipe but it should work ok. Now just to see how well it turns out in the Weber and Oz Day dinner is just about complete. (having marinated Lamb in the weber too).
My TMX arrives, hopefully, on the weekend so I'll test the Damper in there again and let you all know.

Australia Day is fast approaching so I have just printed off this recipe to try and have bumped it just in case anyone else is looking for a recipe and be inspired to fire up the barby and throw on a lamb chop.

I learned about dampners from the Forum last year CC and I also now know about Lamingtons having watched Australian Masterchef.   I think I'm becoming multi-lingual  8) 8)
