Ice Cream with no cream - just milk?

Hi all,
Due to a brain fade, i have an excess of full cream non homogenised milk here.  Does anyone have a recipe for ice cream using just milk and no cream?

Sorry can't help with the ice cream,  but Andi had a recipe for making cream cheese ,  using lots of fresh milk.

If you have icecube trays you could freeze the milk in cubes and make the EDC blueberry icecream (also yummy with other berries). I try to keep bags of milk cubes and sometimes cream cubes in the freezer ready to make it up.   :)

Sorry, all the recipes I've tried are with cream.

Maybe you could make yoghurt and then make frozen yoghurt?

There's a recipe in Joy of Cooking (I think) which my mother used to make which involves milk, lemon juice and lemon zest and sugar and it produces a kind of milk ice which is very tasty but thaws faster than ice-cream. 

I'm afraid I can't recall the quantities but you basically mix milk with the lemon juice and zest (maybe 3 lemons for 1 litre milk) and add enough sugar to taste.   Then freeze it.   If you don't have an ice-cream maker, it needs to be remixed half-way through the process.

There are recipes for ice cream made with junket and milk and sweetened condensed milk.  You can make the dulce de leche recipe but only go for 25 minutes to make sweetened condensed milk.

Thanks everyone.  Silly me didn't even think about freezing it for instant icecream (I've done this lots in the past) or making more Dulce La Leche.  Thanks for the reminders!

My big favourite here is making a double batch of chocolate custard and freezing it into ice cubes trays and then blitzing it to make instant chocolate icecream/softserve. I keep snap lock bags ready to go in the freezer - great way to use up reduced milk too  ;) You could also do this with a vanilla custard or lemon for that matter I suppose. We had some tonight yummo...it is sooooo hot here!! 40.8 at 6pm  ???

I wonder whether this would work with Isi' light coffee dessert.  It's mainly milk, with a little cream.

Looking forward to hearing Judy, I've had coffee icecream on my list to try and this could make a great base for it.  Maybe whip it a lot more before freezing?

Well I hope everyone out there is ready for this - it was divine  :D :D :D  Tasted just like Peters Light & Creamy chocolate icecream and that is what I have been looking to replace as they have just downsized their container and still charge the same.  It is the only ice-cream I eat but yippee, no longer will I have to buy it.   I just replaced the coffee with 100g grated dark cooking chocolate then followed isi's Light Coffee Cream Quick Dessert recipe.  I initially poured the mixture into ice cube trays as I thought I would have to whip it to get ice-cream once it had frozen but it just turned to liquid again when I did this.  I refroze it in an old yoghurt container and as it doesn't set solid, you just spoon out what you want.  I am over the moon, isi I love you  :-* :-* :-*   I will now be able to make the vanilla version by replacing the coffee with some vanilla or the strawberry or raspberry version by just folding through some fruit coulis when the mixture is almost set.  Did I tell you I love you isi  :-* :-* :-*  Thank you, thank you, thank you.

Judy, I think you like the icecream!! It's probably healthier than the Peter's one too. I used to buy that but as you said it is now 1.8 litres and not 2. Grr.
