Potato Flour and starch
« on: February 05, 2010, 05:06:11 am »
Hi
Has anyone made potato flour and/or starch using thermomix?  I have looked at some recipes on the net but wonderedif Thermomix can give any shortcuts.
Thanks
Bron

Think that you would need to probably use a dehydrator to dry slices out after they are cooked.  If you use a mandolin (or food processor with slicing blade) and make lots of slices to cook, then dry them and THEN put them thru the TMX I am sure you ould get there - just sounds like a bit much work.

Maybe make mashed spuds with just potatoes and water and leave this mix on sheets to dry and then blitz them in TMX?

Think that unless you have lots of cheap potatoes it may be easier to buy it ( being a bit defeatist but have been time poor lately)

Tebasile may be the go-to person for this - maybe PM her?

 ;D You think so Thermomixer ?  ;D

Hi Bron,  blend some starchy raw potatoes on speed 5 or 6. Put them in a colander, lined with  double cheese cloth or kitchen towl, over a bowl  and pour water over. Let sit for a while and squeezel. The starch settles to the bottom. Pour the liquid off without disturbing the starch. Let the starch dry in the bowl.

Follow the instructions in the last post but if you have paper coffee filters, pour the water containing the starch into the coffee filter.

You can pinch the top edges together, use a clip to hang it up and the starch will dry much more rapidly.

I've also done this with rice starch.
