EDC p 115 Buttermilk bread

Since it is a miserable day here I decided to make the buttermilk bread from the EDC book and followed the recipe to the t.
It was very sticky and didn't come out of the bowl. Used oil on palm (as instructed) and tried to mould it but it was still too sticky. Finally gave up and used some bakers flour to get it going.
The bread is fine but very hard and crusty on top and soft inside.

Courton I would suggest you go straight to isi's bread recipes for a successful loaf or rolls. Everyone loves them and even I am having success now whereas I was hopeless before dear isi came onto the forum.

Yes, you are absolutely right! Isi's portugese rolls are a hit in the family.
I just thought I might be adventurous and try the EDC one... will not do this again. Totally unimpressive.
I wish TMX would realise how much of a disservice they are doing by providing such a poor cookbook. Anyway, I know enough people complain about it so I will not go on about it.
The bread did not taste good once it cooled down. We had to toast it to make it more palatable!

I think TMX Australia should put Isi on the payroll and get some of her recipes in the EDC. Yummo!!!

Hello my Friends!
When I opened tonight the forum was aimed to put a Buttermilk Bread recipe I usually do.
Behold, I saw this topic and decided to open!
I was so impressed and surprised with what I was reading that I showed up to my husband very proud!!
You are alls o nice that it makes me want to put more recipes for you
So and now I am going to put the recipe.......

Poor courton - MANY years ago I attended a sourdough class where the temperature and humidity of the flour was measured and the amount of water calculated precisely based on the figures.
Once you have made a particular type of bread a few times you will get to the point where you say -Naaa , that needs some more flour/water etc. If it looks VERY sticky when kneading then add some more flour. If it is dry add some moisture.
It is a learning process that never ends

We have been making our own butter, so I have made the EDC buttermilk bread a couple of times. Have attached a picture. Am going to try some of the legendary Isi's bread recipes next

Looks good & cuts well O4aTimtam. Now onwards and upwards with some of isi's recipes. I also like the olive oil rolls from the UK Thermomix site too for a change.

Looks like this bread is better shaped into a 'rustic' style, rather than putting it in a tin.
I'm not going to try it yet, as I'm having issues with all my bread making at the moment. When I get that sorted, I'll give it a go. Thanks for the reviews!
