EDC p49 Hommus recipe tweak

Minor tweak: To make it more flavoursome, I added 1 teaspoon ground cumin and only 1 1/2 tablespoon of tahini. Delish.

I think this recipe calls for way too much garlic - I only use 1/2 - 1 clove.  I also don't think the tmx chops garlic fine enough for hoummus - I use a garlic press instead.

I love garlic but agree that this recipe has a bit too much in it.  Garlic cloves vary a great deal is size also though I guess.  I know there are mixed opinions on this but I personally find that my garlic chops a lot finer in the TMX when I drop it in with the blades running (and the same with chilli).  :)

Thanks, I add cumin and coriander powder to the hummous and tzatziki.  I like their flavour.

For a completely different flavour - I saw this recipe off  Nigella Lawson's show yesterday called
RED PEPPER HOMMUS:
jar flame roasted red peppers
can chickpeas
1 teaspoon paprika
cream cheese (2tbsp - whole block - depending how creamy you want it)
2 tablespoons garlic oil or clove
1 teaspoon lime juice
Salt
Whizz into a puree

Might be tastier than ordinary hommus Nay-nay.  I find that very bland myself and most visitors don't particularly like it either.

I love hommus! Before we got TM we would buy at least 2 lots of hommus for the week, so I was a little bit concerned when reading the reviews as to if I was going to be able to replace the bought hommus for the TM version. Well my first attempt is brilliant. I took some of the adjustments off of the forum so thanks for all the extra tips. Here is what I ended up doing:

2 cloves of garlic - added to TM whilst blades are spinning (spatula down)
Add 10grams of good olive oil - saute for 2mins on varoma temp
add 40grams of lemon juice (fresh)
1 teaspoon of ground cumin
1 can of chickpeas - drained
4 heaped teaspoon of tahinni
good sprinkle of paprika

Speed 4 for 50 seconds

( I accidentally did 50grams of lemon juice and that was too much so have reduced amount)

Hope this helps the hommus lovers!

I endorse the addition of the cumin in this recipe.  A hostess of mine insisted on this tweak at a demo and she was very proud of everyone's response to it.

I actually double the quantity of garlic:  love hommus with some kick  :)

A customer made a delicious tweak to the Hummous recipe at our demo today with the addition of honey, but since she did it herself, I didn't quite see how much.

I made this for the first time today and really happy with the flavor.  Waaay better than supermarket dip and close to the loveliness of the Lebanese shopmade hummus.   
 I used 1 large garlic clove, less than 1/2 tsp of sumac, ground coriander and ground cumin and less tahini than recipe stated as DD didn't like the sample of plain tahini. I didn't need to add oil, it was nice and creamy. There was a touch of oil already in the tahini I made.  Incidentally the Rainbow Recipes book adds water rather than oil if needed, so that's an option to make it lighter.

Was cleaning out the kitchen cupboards earlier and found a tin of chickpeas so thought I'd try the EDC recipe for hommus.  In addition to the ingredients listed in the EDC, I added approx 1 teaspoon ground coriander, 1 teaspoon gound cummin and 1/2 teaspoon of sumac. 

Verdict: very nice and so easy to make.

I've got a loaf of bread in the oven so I'm going to have fresh bread and hummus for lunch.

I make this quite often. Yesterday I whipped up a batch of Helenes Onion Jam, Super Kitchen Machine, (caramelised onions) & put a few spoonfuls through this. It turned this dip into WOW ;D

Worth giving it a try :)
