LADY FLO'S PUMPKIN SCONES

Need I say anymore - everyone knows about Lady Flo's Pumpkin Scones.  For our overseas members, she was the wife of a previous long-standing, controversial premier of one of the States of Australia, Queensland. Thanks Nay-nay for providing me with the ingredient list for this recipe. Too easy and so delicious!

1 Tablespn butter
110 g castor sugar
1/4 tsp salt
1 egg
270 g mashed pumpkin (1 cup)
370 g self-raising flour

 Preheat oven to 220o C, fan forced.

Place all ingredients into TM bowl. Bring together for 3 seconds on speed 5.
Set lid to closed lid position and knead on interval speed for 25 seconds.

Tip the dough onto a floured silicon mat, flour your hands and press the dough into a 3cm thick round. The dough will be a firm but moist mixture.

Using the MC lid, cut out 13 scones and place them onto a baking paper lined tray, just touching each other.

Bake 14 minutes or until bottoms sound hollow when tapped.

Serve warm with lashings of butter.

bellesy - I made these and used roasted JAP pumpkin that I had leftover from the pumpkin soup I made the night before.  Because it's been roasted, the pumpkin was quite sweet on its own, so I think next time I do it that way I'll leave out the sugar.

Denzelmum - Kind neighbour sent pumpkin from their backyard. This is the last piece of pumpkin. Lovely colour and sweet JD!

Kimmy - Made for lunch today. Very easy and delicious.

Thanks so much for posting this!  I've had her pumpkin scones recipe floating around my recipe box for ages, and I tried it once manually.  I remember the dough being sticky and a real mess to knead.  Can't wait to see how much easier it is to make in the TMX!

Thanks Judy.  I have a couple of Lady Flo's cookbooks and really like the recipes from them. I have made this recipe without the TMX, will now try with it.
May all dairy items in your fridge be of questionable vintage.

So glad you loved it and thanks so much for converting it and sharing it with the Thermomix world. I wonder what she would think of TMX?? She only lives 30mins from me I should give her a demo!  ;)

I don't know if I am classified as a youngster (30??), but I certainly know who she is.  When they had a residence in Tassie (Sheffield) quite a few years ago they opened a scone shop.  It sold the worst scones ever tasted and was a big joke with the locals.  I am certain Lady Flo didn't do any of the cooking, but possibly should have been a bit more involved!!!

Anyone under 50 is a youngster to me Chelsea  :D :D  Lady Flo certainly should have been more involved in the shop, who would let people make sub-standard scones when you have such a reputation as a scone maker.  You certainly wouldn't go back after the first purchase so I guess the shop didn't last long  ???

I was thinking this morning about trying scones in the TMX. I have been resistant since the best scones are those that aren't handled much. I thought the kneading would make them too much like bread.

Anyhow, I wonder if anyone can give me some guidelines for cooking the pumpkin in the TMX first... in the same manner as mashed potatoes I guess? That would be a great improvement for the recipe I think :)

I think I'd steam small pieces of pumpkin in the varoma, then slice off the skin (much easier to do when it's cooked rather than raw), tip out any leftover water in the jug, pop the pumpkin in there and blend.  Then add the other ingredients to the jug and continue on.

If I wasn't cooking anything else at the time, in lieu of steaming pumpkin by TM, I would just pop in the microwave as it would be quicker and easier to clean afterwards.

You can cook the pumpkin in the TM bowl - but best to use the butterfly and go reverse.  

Steaming in the TM basket or Varoma will make it less likely to get really wet.  So just be careful of that.

If you only knead for a short time to bring it together then you should be OK.  Shame we haven't trained JD to use a camera.

Maybe JulieO could oblige ?
