Hi, i am not sure if this is a stupid question but i need to ask.
I bought some cream to try and make butter, but i noticed the use by date was 2nd March. Does this mean my butter will only last til then also??
Also another question, I grated a block of mozzarella cheese last night for home made pizzas, and have way too much left over. IS it okay to freeze?

mum23, you can freeze both the butter and the cheese. The butter would still be OK to use once past the 2nd March, people on here do buy their cream when it is out on special & close to useby dates, specifically to make butter. If you are baking a lot, a batch won't last long anyway. If you have made bulk amounts of butter I would freeze some.

And I think at the cooking classes they say that butter will last in the fridge 2 weeks after the date it is made, irrelevant of the date of the cream. I've frozen butter in small batches so I can gradually pull it out. And grated cheese freezes well too.

I bought a heap of cheap cream a while back and made it into butter. Then I found one lot hiding in the fridge. It was nearly 2 weeks over the date but didn't smell off. I made it into butter and it was fine. I always freeze most of my butter and also the buttermilk.

I have never worried about use by dates on any food. Your nose and your tongue are the best guides. I have just opened some sour cream over a month out of date and it is just fine.

Pure 100% cream for butter.
What are the added ingredients in the thickened cream?
Here in UK we can get thick cream but without additives.

I've only ever used thickened cream for making butter and it works well for me biancanapper, are you in Australia? Cream could be different in other countries.
