Feta, Onion, Oregano and Yoghurt Muffins - with photo

Name of Recipe: Feta, Onion, Oregano and Yoghurt Muffins

These are very flavoursome, I adapted a recipe I already had and made some changes too. Hope you like them :)

Ingredients:
1 medium red onion
100g feta cheese
1 T fresh oregano
270g plain flour
5g baking powder
1 egg
60g plain yoghurt
170g milk
1 T butter

Preparation:
Peel and chop onion into quarters. Chop in TMX for 5 seconds on Speed 7
Add 1T of butter and saute at 100 degress, speed 1 for 2 minutes
Pour out into a bowl and set aside.

Add milk, yoghurt, egg, oregano and feta to TMX and mix thoroughly for 1 minute on speed 4.

Add onion back in, add flour and baking powder and a pinch of pepper.

Mix for around 1 minute on speed 1.

Pour out into oiled muffin tin, I made six huge muffins, it would probably be better making 12 smaller ones.
Cook for around 25 minutes at 180 degrees.

Thanks Quirk, I like a savoury muffin with a bowl of soup and these look very nice indeed.

I'm sure these must taste lovely as they have one of my favourite cheeses in. Savoury muffins are always a nice change, especially as you said Judy, with soup.
May all dairy items in your fridge be of questionable vintage.

Thanks for this one - I wonder how they would freeze?
I like to have a batch of savoury muffins in the freezer to have for lunch - they make a nice change from sandwiches!

Very good recipe! Thanks! I made this last night for school this morning and have some left for weekend to have with chicken salad. This mix made 10 normal sized muffins - but those in your piccy with the BIG heads sure look impressive!!  :)
