Here you go Jakodai.
This is what I did for my 8 litre pressure cooker. If you have a smaller one you may need to reduce the quantities as you can't fill more than 2/3 full.
This gave me 3 litres of stock.
CHICKEN STOCK in the PC
4 chicken carcasses
4 carrots, washed, end cut off and cut in halves/thirds (no need to peel)
4 celery stalks, cut in large chunks
2 onions, unpeeled but with the ends cut off, halved or quartered
2 cloves
2 fresh bay leaves
1 bunch fresh parsley
1 bunch fresh thyme (used some dried)
1 tbsp sea salt flakes
Add a small amount of oil to the pc. Heat until hot, add carcasses and cook for a few mins, moving them around until starting to turn golden.
Add rest of ingredients and add cold water until either veg are covered or until pot is no more than 2/3 full.
Cover with lid and lock in place. Bring to high pressure over high heat. Once stabilised, cook 25 mins.
Release pressure using nrm.
Remove lid and allow to cool slightly. Pour into a colander over a large bowl and allow to drain for a while.
Then discard the solids, and pour the liquid through a fine sieve into another bowl to remove any little bits.
Refrigerate for a few hours or overnight. Remove solidified fat off the top and discard.
It’s up to you how you freeze, I choose to freeze in 2 cup amounts.

Thank you Denise - that was a slap up job of decorating in about 1/2 hr - made the bimby choc cake on Thursday night and froze it until this morn

Those cakes look amazing. Maddy that pink is well and truly over the top but I know it wasn't your choice. We have organized a Masters BBQ tomorrow to raise funds for a school in Cambodia which my DD will be going to as part of a world expedition in December, so I thought I would make some biscuits to raise money for my Dry July challenge, I'm just asking for a gold coin donation per biscuit. I made melting moments with vanilla buttercream, ginger nuts, chocolate ripple and old fashioned jam drops. I also made individual beef and Guinness pies using the masterchef recipe and the sour cream pastry off here. I much prefer pies done the old fashioned way but they take a lot longer than in the pie maker. All up quite a big day.
