Quiet TMX day today - Judy's chicken and veg soup and Spelt Bread Rolls.  Double batch of fruit buns tomorrow.

Did some quick research for you JD re. choc risotto.  Cold left-overs are very so-so in my opinion.  Warmed left-overs are quite nice. The flavour is even nicer than yesterday but the texture is slightly gluggy (still ok though).  We still have over half of it left from yesterday and there are four of us.  I wonder if the recipe could be halved??

P.S - Was a little bland without berries and icing sugar- should have thought of those (for research purposes of course)!

Thanks Chelsea - mine is cooking at the moment and the 2 of us won't be taking a huge chunk out of it tonight.  DH only has a very small serve of dessert, if any at all.   Can't see any reason why the recipe can't be halved. I only cook desserts to try them out and see if they are suitable to serve for visitors - true ;D ;D ;D.  I'm happy with a low-fat ice-cream everynight myself.

Tonight for tea we had low-fat, oven baked pork & corn cakes with a sweet chilli dipping sauce, home-made oven cooked potato wedges and a tossed salad. Nice light meal but then we followed it up with the white chocolate risotto :D :D :D
Will post the cakes, nice for the coming warmer months.

Tonight for dinner we had Judydawns Apricot Chicken with rice and steamed vegies - delish!! Although Miss 3 didn't touch much (she's coming down with something again...  :-[ ) It was enough for us, Mum and Dad and perhaps another 2 meals as well.

Not a great deal of excitement in our kitchen today.  I didn't have any ice this morning and our juice suffered because of it (not half as nice without it).  I made Cyndi's jam muffins today for a change and got the thumbs up from the kidlets.  They weren't anything to write home (not bad, just not special) but it was nice to mill my own flours for the recipe.  Dinner was lasagne followed by some more choc. risotto.  Didn't really think that though - way too many carbs in one sitting!!!  :)

Went out for lunch today so whipped up Cookie1's curried Cauli & kumara soup for tea and had a bowl of reheated chocolate risotto for dessert (just added milk to bring it back to a nice consistency and it was fine).

I made the Gozleme from the Budget Busters Booklet for dinner tonight. What a great recipe - even the kids loved it.  Aside from this we made some breakfast juice, bible bread rolls for lunch (so tasty) and an apple teacake for a special arvo tea with family.  Another yummy thermie day!  ;D

Had a TMX burst in the middle of the day, banana pikelet batter for tomorrow's breaky (hope its ok lol I had left over egg whites to use up), strawberry puree and icecream that is now strawberry icecream.  We've been out most of the day.  Need to menu plan tomorrow for TMX to get us eating yummy healthy food this week.

Today we've made roasted beetroot dip and cape seed bread which is just cooking.  I'm planning meals for the week, all will be TM based somehow.

Horrible weather here, hope there is sun shining somewhere!

pancakes for breakie and risotto for lunch (pumpkin, bacon and zucchini). dunno about dinner yet lol

Wow, you have all been very busy little beavers in the last week. We've had Baf's chicken with the cheese sauce and vegies in the varoma, several serves of the strawberry soft serve icecream, Masterchef's sabayon,steamed puddings with custard, Judy's beer and beef, lots of soup (it's rainy and cold here), rice, pasta etc. The TMX has been wonderful to whip up meals when you come home tired. Especially as they're all yummy and impressive. My visitor has been suitable impressed. ;D
May all dairy items in your fridge be of questionable vintage.
