Just started a dough recipe for pizza srolls that has zuchinni in the dough mix. If they work out will post. TM kneading atm.

The dough with the zuchinni was great to work with, rolled up on 2nd rise. Hoping this is another good lunch box meal.

Pretty happy done  3 things today using zuchinni & cp wouldnt  know :)

Used a few, but then saw I needed to pick a few more, from memory lat time our crop  kept going for ages. Hope so.

Hope so too...ours are just starting to flower here... you must have a warmer climate than us!  :D  Can't wait to start using them, my girls love zucchini things, don't need to hide it!! Look forward to seeing the zucchini pizza dough recipe.  :)

The pizza scrolls are in the oven, looking good.

Dont know why cp,doesnt like zuchinni, he eats a lot without knowing, but steamed zuchinni he hates. I put it in everything :)

I feel so good  at home pottering & cooking, it seems to have been forever since I could cook.  House has had a half hearted tidy up ???

I have to be careful or I will have  full freezers soon.

They look good Hally.
Made some iced puff pastry and the vegetarian sausage rolls this afternoon.
I sometimes use a mandolin to cut the zuchinni into matchsticks then dry them in the dehydrator and use them to thicken soups and casseroles.
