Mango, cooking here today and don't want to see a mango again for a while !!!
I still have a bag full and have made coconut and mango muffins, mango kulfi, 36 mini muffin size frozen mango bars + 1dozen standard muffin size frozen mango bars, a mango pear and ginger crumble, 24 mango and citrus fruit calypo's and mango sauce for coconut prawns.
Have enough purée for my mango cheesecake but forgot to buy the cream cheese!!! Have sick GS here so will make cheesecake another day as don't want to take him out.
Giving some to my neighbors as don't want to waste them.

Saved some purée  for daiquiri's too  ;)

It's nice to get these bags of fruit but it always means a lot of work - you've done a great job getting through 1 bag at least.

 Couldn't really have the daquiri while cooking Judy or GS would have dobbed me in  ;D
He liked the muffins but I won't make them again as they were a bit dense and lacking something.
Very happy to have used up a lot of the mangoes and just offloaded a few to some neighbors.
Don't know what's happening here in Perth  as DH came home from work last night with another bagful that someone from work gave him ???  My niece is coming later to take some.  Will purée some more tomorrow and freeze.

Thought about it this morning CP and had the ingredients but no preserving jars  :(
Will make some on the weekend if I can get to ikea for some jars.
Still have enough mangoes  ;)

Shame about the muffins, you could always crumble them and make some mango custard and icecream and have as a pudding ;D

That's a great idea Amy and I think they would taste really nice with a custard.
Yes poor little GD not feeling well want him better as he has a school camp next week and he would hate to miss it.
DD was supposed to come and do a big cook up with me today but she hasn't turned up.
Can't call her as my phone is in Apple store as I dropped it and the screen shattered. Hopefully DH brings it home tonight.

My solution to all unsuccessful baking... crumble it and smother with custard! ;D
Plenty of rest for GS then, he'll need to be fighting fit to keep up with his friends on camp ;)
I would've come and cooked with you if I lived closer MF :D

MF you can simply remove the flesh from the Mango and freeze it. It's lovely later for smoothies etc.  mango jam is awesome too. I'm partial to mango icecream.
May all dairy items in your fridge be of questionable vintage.

That's a lot of mango recipes there MF! I needed your inspiration when I bough a box from the farmers market for just $3. I love it in my local farmers market!
To those who don't really like Cadbury...have you ever tried English Cadbury chocolate? Heaven on earth. I'm a huge fan of Lindt and the Aldi chocolate now I live in Oz.
I made the BaCaZu muffins from the recipe community today. They are lovely and great for getting some good stuff into the kids in disguise!

MF I buy a couple of boxes of mangoes over summer when they are cheap and peel and chop them in big chunks and then freeze for my daily smoothie. I lay the pieces on a glad bake lined tray until they are almost frozen so they don't stick together and then put them in a zip lock back for future use.

Great suggestions cookie and wonder. I thought I had to purée them before freezing.
Will peel and chop the rest today and freeze for future use.  Thanks  :D
