Have fun Amanda. Let us know what you go on in the theme parks.

I am having serious withdrawal symptoms as I really haven't used the TMX very much this last week. We seem to have been run off our feet. I plan to make strawberry jam, torta caprese and the vegetable quiche this afternoon. That may help the withdrawal symptoms. :P
May all dairy items in your fridge be of questionable vintage.

Oh, this one is delicious Mama Bel (Dulce de Leche).  I used it for the banoffee pie but it would be nice just on its own.
Mine was very thick so don't think I will cook it as long next time.

No cooking for me for a while.
I'm off to sunny Brisbane, with my youngest, for a family wedding and a week of theme parks ( :P) and frizzy hair!!

Phone call at 9.30am -'be there in an hour or so for coffee, don't go to any trouble, not staying for lunch'. Haven't caught up with SIL&BIL for a while and had plenty to talk about so thought, what can I feed them.  Had a rack of pork in the fridge, frozen gravy, lots of vegies and some brownies in the freezer. Made cheese sauce in TMX whilst I cooked the broccoli and cauliflower, did the breadcrumb/cheese topping in the TMX, microwaved some whole potatoes ready to throw in the weber with the roast (1 hour cooking time for the rack which would have served 6 people), cooked and mashed trombone, did carrots and peeled the parsnips. Everything ready to go by the time they arrived, popped weber on at 11am and we were sitting down to a lovely meal by 12.15. They were very impressed and SIL is now thinking the rack of pork would be better for Christmas than a leg - so much moister and quicker to carve into nice thick, juicy chops.  Off they went a few hours later, stomachs full and still wondering how I did it ;D ;D ;D

Yes, for the hour it took them to get here it was but then things slowed down whilst things cooked or reheated and it was quite a relaxing visit really.  Can do it when I have to but prefer a couple of days notice when it comes to meals for visitors. Having said that, then I probably would have spent hours pouring over my recipes deciding what to do whereas today it was a wham, bam, thank you maam meal which went down a treat.

JD I grew up in a country town (Cookie1 you mentioned this town once..starts with "M"---and ends with a, on the other side of New Norcia or Bindoon from whichever way you are coming-- oh what the heck! Moora).  I feel that I know you (and probably do, and lots of other TM people) because every one that I knew were homely cooks, and could turn out a bellyful of wholesome food at the wink of an eye. Good food  for visitors and lots of it, doesn't have to mean a weeks wages.

Too true CP63 but it's amazing how many people feel 'inferior' to those who can whip up something in a flash and then feel uncomfortable about having you back for a meal (I'm not referring to today's visitors by any means, we often eat there).  If only they realised, we can all enjoy any meal if we haven't cooked it.  My best friend was the most wonderful cook I ever knew and her dinner parties were like dining out at a restaurant but when I had her back here for a meal, I just did my best.  How I miss our long phone calls about food and recipes and often wonder what she would have thought about the TMX.

A lot of people have something up their sleeve that they can serve to people whether its an egg, dip, pikelet, cake or biscuit, biscuit, entree, main meal, dessert. It depends on the hour of the day.

Its a shame that a lot more people don't think that their friends will REALLY LOVE IT -- what the Heck (have a healthy back up in the fridge just in case some one pops over -- otherwise the kids can eat it! Its about the friendship. And... more importantly, telling your REALLY good friends that they don't have to tell you beforehand (eg. for a few drinks) just rock up if where there, if where not - so what! ( just be more sociable - thats nice)

Finished the batch of marrow jam (have posted the recipe), and (finally, after quite a saga!) the chocolate coconut cake (which is very nice, by the way ILB, thanks).  Also made an (accident recovery) sweet polenta dessert thingie, which is waiting to be eaten for pud tonight.

Finally I made some buttermilk dumplings, which are now sat in the varoma, to cook above some goose soup made with stock I from the goose carcasse from the other day.  It's now going to be a thick soup, as I merrily set it onto speed 2.5 for the varoma, and THEN remembered that I'd put chunks of potato in it  :o  :P  Too late.  If I ever make it again, I honestly will remember to put the potatoes and veg in the internal steamer basket!!!!  :-))

Anyone got a remedy for my very unreliable brain?!  :-))
