That looks great kimmy, how do you make the balls of ice cream? I assuming you can't roll it in your hands like the cake pop mix :-\
They are cake pops, not icecream. Used the vanilla version of ILB cake and food colouring. Ones on top are dipped in white chocolate.

Suzanne, saw the photos of your cookies and scrolls on the other thread, and they look great.

Made granuesli, tenina's lemon curd and tortillas.

I made the easy chia, walnut & date slice, it is so easy to make & is a winner with everyone even my 2 1/2 year old nephew who is going through a real fussy eating stage.

Love TM also made two batches of scones this week when I had unexpected guests  :)

I made scones today too. I had some cream to use up, so I made Nay Nay's scones - half plain and half with sultanas. I also had some older cream too so I made Dan Lepherd's sour dough loaf. I had a very stale sponge cake so I made Michele's mums cake crumb biscuits, and then I made a healthy type slice to use up a few other things in my cupboard.
It was a day of using up leftovers as I hate wasting food :)

Not the prettiest of scones but they were lovely and light and delicious with my home made apricot jam. I do like my thermie :)

I have no need to cook today (until dinner time) so thought I might try to convert a recipe and browse through Dan Lepard's Short and Sweet.

Came across chocolate custard muffins.  P183. Now any cake that starts with making custard over a stove and whisking constantly is perfect for a conversion. So now I am contemplating trying it with rice flour instead of plain flour so it is a gluten free option for my little boy's birthday party next month.

Would that be a straight swap?

The muffins look lovely.

I'm not sure about the swap for the flour. Could you do a straight swap and if the custard doesn't thicken add more?
