Kimmy we are a bit the same in my house - all small eaters and don't really snack so if I do a big cook up I always end up throwing things out which I hate, so I have to be very careful of how much I cook.

Did a test run on tinned Chickpeas for the Roasted Chickpea and almonds.  Need another 10 minutes baking.
Then baked some Tahini biscuits. Lactose free and could be made gluten free.

I send a lot home with mum too. Dad has a sweet tooth and mum doesn't bake that much anymore.

I've made 2 of cookie's asparagus, zucchini and goat's feta cheese loaf plus a batch of rice pudding for Mum tonight.

made pumpkin jam yesterday


Ready in 30 minutes

500g of pumpkin chopped
1/3 cup of lemon juice
1/2 cup of water
1 teaspoon of mixed spice

300 g of white sugar
 
Add all of the ingredients in the bowl   
Set time for 30 mins varoma speed 2
i don't need a recipe i'm italian

All looks good, my current fav jam is a mix of what was in the fridge - apple, plum, strawberry and mango!
Made more scones today and a fruit cake.
Guess I am baking again! Hooray.

Could you use butternut squash Uni? Or I'll wait til Halloween, should be lots of pumpkins then.

Astarra what was the roll recipe... They looked so light. Your link took me to cloud dough for playing with... Or am I mixed up?

Made chicken and water chestnut won tons for dinner last night, in Thermi made Chicken broth.
