Thanks Chookie. I think cherries are a wonderful gift. I absolutely love them, possibly because they are usually quite expensive here and available for such a short time. My brother in Canberra loves to tell me how many kilos he is picking from his cherry tree.

ES due to the heat we've already had, I know others who are choosing to go down the cold lunch path this year for the first time. Salads are not boring these days so a lovely spread can still be provided.

I made Mince Pies using
Rich Shortcrust Pastry
and filled them with
Pear Mincemeat
.I made 16 altogether and a "freeform" jam tart.

Today I made a recipe that was in an email from HO when Anna Gare first came aboard with Thermomix. I've included the link to the recipe below.
Instead of using a loaf tin, I used a tin that has 5 heart shaped moulds in it which also produce a little heart shaped indent on top of each cake for adding fruit, sauces, cream etc for decoration. There was also enough batter left over to fill 2 AA silicone moulds, though I should have brushed the insides of them with the TM cake release that I used on the heart moulds as the cake did stick to them. They came out perfectly from the heart moulds as you can see.
Anyway, we had one warm with a dollop of cream and we thought they were really lovely. Sweet enough with enough tartness from the raspberries to give a good balance. So quick and easy in the TM, I will definitely keep this recipe.
I've frozen the other cakes to have at random. I will reheat them on a gentle heat in my Turbo oven. I think serving with a little raspberry coulis and a scoop of home made vanilla bean ice cream would make for a special dessert.

This was my dinner (last night and tonight), Borlotti bean & bocconcini bread salad. It's a Michelle Bridges meal that is quite nice and flavoursome and I always feel really good after having it.
Not the best photo as you can't really see it all, but thought I'd post it anyway.
