I've been pressuring cooking two lots of dried beans that I soaked overnight. I then made Smoky Baked Beans with part of the beans.The rest I've bagged up in 250g portions and popped them in the freezer.

Today I made 2 Ciabatta loaves. I converted a Paul Hollywood recipe to TMX. These would have to be the best Ciabatta loaves that I have ever made. The crust is thin and crispy and the crumb is soft and tasty.

I had to tweet the recipe a bit and the first rise with 1/2 the mix took 6 hours. Then another 3 hours, but well worth the wait.

That ciabatta looks great, Chookie.  Was it a SD or yeast recipe?  I would love a good reliable ciabatta recipe (an extremely subtle hint there, in case you didn't catch on  :P)

This was a yeast recipe. Marina, I will post it just for you. I notice that Paul Hollywood has 2 versions of this Ciabatta. The one I made took a longer time. I think this is what made it so nice.
Today I am going to make a Ciabatta with SD.
Yesterday I sliced a SD loaf and dried them in the oven to make wafers for Fathers Day to have with the dips.

Oh that would be delicious with cream and vanilla icecream. DH has said he wants pizza, so that is what he will get, possibly with a custard and apple crumble. Pizza is a family affair here, I do the bases and cut up the bits and pieces and make the passata, DD puts it on the pizza and DH cooks them in the pizza oven.
May all dairy items in your fridge be of questionable vintage.

Yesterday I made a Sticky Date Pud with double sauce for Fathers Day Pud. I have the TMX recipe on chip and in Basic cook book. I use the ingredient list but change the method. Much simpler and quicker without any difference to end result.
No removing to set aside which I always feel a nuisance.
Just chop and cook dates in the water.
Add carb soda, wait 5 minutes and add butter and sugar. Mix on 4 for 10 seconds.
Let cool. Add eggs and flour, mix 10 seconds, speed 4.
How easy is that!

You're a star Chookie 8) That ciabatta looks great.

I'm trying to cook a lot more these days as it seems impossible to find decent food "out". Although there are some nice breads available I think $13 a loaf or more is way over the top! Also, is it just me or is everything getting saltier and sweeter? Sorry got sidetracked there for a minute :-))

Today I've been adding to the preserves shelf with pickled cumquats (using Stephanie Alexander's recipe) pickled cucumbers and cooked mayonnaise. Dinner tonight is an old fashioned clean-out-the-fridge casserole with parmesan and parsley dumplings.

Sausage rolls, 36
Ratatouille without onion but with leek
Garlic butter and the sliced bread and now wrapped in foil for tomorrow
Small pork and veal meat balls to add to soup.
Chicken stock
Stewed apple for pork tomorrow
Awesome cheese sauce.
Lemon juice, olive oil, mustard and land cress dressing
Prepared lamb and pork ready to pop into oven tomorrow morning
Grilled fish and steamed veggies for dinner tonight.
