I'll be interested to hear how your meals taste Marina.
I made my wholemeal loaf again today with a couple of small changes. I haven't tasted it yet, hopefully it's ready to post.

The spiralised rosti turned out pretty well, so that will be refined a bit and cooked again. It's the pumpkin / chickpea / pasta / miso sauce one tonight ... I'll keep you posted.

I spiralised two slightly larger than average sized Dutch Cream potatoes (I used DCs because I happen to love them, but I should imagine any variety would do) then dried them off a bit in paper towels.
I mixed them in a bowl (by hand) with salt and pepper, a couple of eggs and 1 tbs flour then cooked them in one large 'cake' in the frying pan and finished them off in the oven. They were slightly under cooked and it would have been better had my grill worked in my stove, but seeing as it hasn't worked for many years I had to put up with whatever came out at the end! Next time I'll do the whole thing in the frying pan and simply flip them. Very easy.

It actually turned out quite nice. Not sure if I would repeat it as there were four parts to it - all straightforward stuff but still a bit of work pulling all of them together, but it was definitely edible.
5:2 day today, so nothing interesting

I've noticed that a lot of recipes include miso now.
I watched Jamie's 5 ingredients last night. I think I may buy the book.

well my DD now has a Lactose intolerance, and many other stuff she can't eat, and I took her to a dietician yesterday.
No wheat at all, spelt bread now, rice noodles, or rice crackers, so food will be a bit harder to make things she can eat, and to keep up her proteins.
She hates fish, and chicken, loves fruit.
I am sure to need help with ideas.

Obbie, sorry to hear that. The lactose free milk is very nice and WholemealSpelt flour makes a lovely loaf. falafels are very nice and can be eaten in a lettuce leaf. Coconut oil instead of butter in baking gluten free.
Protein balls with nuts and dried fruit. These are things that my GD likes and she is vegetarian and lactose free.

Sorry Obbie can't help at all. The only difficult one in the family here is the husband. Everyone else eats anything and everything at an alarming rate! That's why I am here this arvo - looking for inspiration, preferably something quick and easy

I use wholemeal spelt flour quite a lot.

Sorry to hear of your DD’s intolerances Robyn, I imagine it makes life difficult when you have to cook different food for some members of a family. We are lucky here that no-one has a problem. Did the dietician suggest any books, it seems they tell you what you can’t eat but they should make suggestions to make it easier for you to find specific types of recipes. Chookie has given you some good options, I wonder if Quirky Jo’s recipes would also help.

Robyn, my DH has lactose intolerance and that was initially a hard one as so many recipes slip in dairy products. There are options, but they just take a bit of getting used to. Because I am vegetarian, for us, we now eat mainly vegan based meals and that has worked out well for us. Work with the dietician to ensure that you are getting the correct mix of foods to cover your requirements and you will find quite quickly that just a few changes and ingredient 'swaps' work out.

Obbie, you can use potato flour to make a lovely sponge type cake. I have posted one under Lemon Feather Cake. You could use lactose free cream.
