Obbie, I have only used Spelt mixed with other flours. As it is Low in gluten you would need to use more yeast.
Your DD might tolerate SD bread. If you want to try some SD, I could dry some and post it to you and you could reconstitute it. Mab has done this with great success.

Carrot, Zuchinni and Ricotta Cake.
Tastes better than it looks.
TMX Ricotta would be perfect in this cake . I used bought Ricotta and it was too dry and I had to add 1/2 cup of milk. Next time I would also add 1 teaspoon of baking powder.
I ground Cinnamon in the TMX prior to making cake. Was able to use residue in cake.
Very good flavour but texture could be better.
Will make again with TMX Ricotta and baking powder.

last night I made another 2 christmas cakes to give away to neighbors, rum balls, and today I will continue with biscuits and shortbread.

Good day for baking as it rained all day.
Made a grain loaf , Worlds Best Diet   Posted
Overnight SD loaf waiting to bake. A gift to lady who took 20% off cabinet that we purchased.
Made mixture for patties from tuna, sweet potato, pumpkin and parsnip, spiced up with sweet chilli sauce.
Today, a batch of tomato sauce and won tons to freeze.

The breads look delicious Chookie. I will be having a bit of a cook up on Wednesday and Thursday as I am baking for DH's brother's wake. Sadly he died on Wednesday evening, only 69.
May all dairy items in your fridge be of questionable vintage.
