Cookie I made Poh’s Silken pear cake today , tastes nice but the instructions were not quite right . Recipe off the Internet , the recipe left out when to add the butter .
I will check in her book K Atie. The book says to add the melted butter after you have folded the flour etc in. She says to tilt the bowl as sometimes the melted butter will go to the bottom.

I made some Strawberry Jam as some of our strawberries were looking a bit sad. I have my SD rising at the moment.

Margaret I don't do my fruit loaf in the bread machine. (Ours is in the van for travelling) I either cook it in a bread tin or this time I put it in a banneton and forgot about it, so it rose a lot.

JulieO's Fruit Loaf.   Unfortunately I managed to flatten the top of the loaf when I turned it upside down in the tin for a few minutes.  The loaf is lovely and soft and tastes yuuum. :)

It pays to remove it from the tin and just put it on the rack in the oven for the final few minutes Margaret but I guess you’ve already worked that out for yourself.  It’s a great looking loaf.

Mab, never mind the dent in the top.  It will still taste delicious. Looks very nice.

When I make a fruit or olive loaf with yeast, I just knead the fruit or olives in by hand after the first rise, into the basic bread recipe.  The salt in the olives and something ( I think the sulphate on the fruit) prevent a really good rise.  Kneading in after the first rise allows the yeast to work .   I don’t add any extra sweetening in the fruit loaf.
The fruit loaf and plain loaf , mixed in TMX and baked in the bread machine is one of the most popular recipes on my Blog.

Mab, love savoury scones and muffins. Yours sound nice.
Might make some spinach and ricotta pastries. Looking for ways to use the spinach and silverbeet.

Bought some chicken legs on special. Soaked in a mix of egg, flour and milk over night.  Mixed  the last of  KFC seasoning into somePanko crumbs, rolled legs in crumbs, sprayed with a little oil and baked in top of oven while bread was baking on low shelf.

Yesterday also made Choc ChipCookies. Recipe makes 60.  Had to remove mix from TMX and hand mix flour and choc chips in .
Make a plain loaf, 1/2 Wholemeal, 1/2 white to make roast pork and apple sandwiches.

A busy kitchen this morning.  I made 40 sausage rolls, a meat loaf from the remainder of the meat mix, 1 blackberry jam turnover, 3 jars strawberry jam and I still have chicken pieces to deal with.

What an enormous effort, Margaret.  You have been a very busy lady.
