That happened to us Cookie when DD2 wanted to have a dinner party with friends at home to impress her new boyfriend.  She gave us $10 to go out for the night  ;D ;D  He must have been impressed, he did marry her 16 years ago.

Today I have had a fiddly day in the kitchen making almond addiction, quick fruit chutney, choc-mint truffle xmas puddings & testing my new Mylittlecupcake mold. Good thing I had leftovers in the fridge as I didn't have time to cook anything. I take my hat off to you maddy for all that you do - it is time consuming, fiddly and I just can't do it as well as you  :D :D :D

Hi Guys,

Its rainy and miserable up here at the moment....so the kids warmed up on some Hot Chocolate.  I didn't have any proper dark choc so I improvised with some premium dark cooking chocolate, the kids didn't seem to mind ;)

Cheers,

Renae :)

I spent the whole morning preparing our KFC meal for lunch.  Made some of Chookie's rolls first (cooked out in the weber as it is very hot here today), mashed potato, gravy, a batch of the magic mayonnaise dressing for the coleslaw, sweetcorn niblets and  KFC chicken breast fillets cooked entirely on the stove top.   Some meal for just 2 people but enough chicken leftover for tomorrow and I have frozen another 6 pieces of coated, uncooked chicken for another day.  A lot of work but it is fun being able to replicate a take-away meal.

Hi Quirky,

I'm in Mackay...sun is only just coming out now, not sure for how long though  ;)

Judy....that is an awesome cook up.  I'm a big KFC fan, so am hanging to try the KFC mix....I wish we had a "LIKE" button for your post hehe  8)

I have been out and about all day today, so haven't cooked anything exhillerating.  I have a corned beef in the croc pot, so my thermie will help me out with a schmicko white sauce and steamed vege's....let's not forget mash potato complete with onion mmmm  ;D

Might even lash out and whip up a vanilla custard after tea so I can try freezing it and whipping it up later.

Cheers,

Renae.

I used a Choc-Mint Truffle recipe maddy.  This is the full quantity which makes 55 balls but I only did half the recipe.

250g pkt arrowroot biscuits or similar
400g can condensed milk
1 cup coconut
2 Tbspn cocoa
Peppermint crisp bar - cut into chunks
Process biscuits 20 sec/speed 8
Add remaining ingredients and mix for 20 sec/speed 8.
Roll into bite sized balls, refrigerate and hour then dip in chocolate & decorate whilst choc is still soft.

For the cupcake mold you wouldn't need to leave it in the fridge for an hour as it firms up too much.

I've made some of Kathryn's Treacle biscuits. They smell so lovely. Dinner tonight is Teriyaki beef with soba noodles from MOTM.
