Earlier today I cooked creamy pork with apples and rosemary, made mashed potatoes and steamed vegies to go with it (for tea later) then made some butter with cream which needed to be used. Decided to use the buttermilk up there and then by whipping up a batch of EDC scones as I'd just had a phone call from friends wanting to pop in this afternoon.

CADA, carrot cake with cream cheese icing (YUM!), chick pea choc chip cookies, swiss beef, steamed veg and vegetable stock.  :)

I made Eggplant Parmigiana from Judydawn - only problem is I didn't have breadcrumbs - not even a single slice of bread in the house, so used crushed crisps and it turned out really well (if anything, just a tad too salty), but it really is the nicest parmigiana I have ever had.  Next time I'll remember to make sure I have breadcrumbs.  I also salted then rinsed the eggplant before using it, although the recipe didn't call for that, my problem is that I nearly always undercook the eggplant and it doesn't taste so good if it isn't well cooked so I was determined to get everything right this time and not to make even the slightest mistake in the preparation of this dish - as it turned out, the varoma steaming cooks the eggplant anyway so this wasn't a problem.  Also, next time I think I will use more eggplant.  I didn't have any of my own passata either, but used a jar made by a certain American movie star and it worked very well.

Also made Achookwoman's hot cross buns - they were lovely, but huge!!!  Next time I'll work on the size issue.

Finally, made Farfallina's New York Rye bread and it was a flop - not Farfallina's fault, I simply didn't follow / read the recipe and I have found, over the years, that reading and following recipes correctly really is a constructive exercise!!  However, my DH is eating it and doesn't seem to mind that it's not the most successful thing I have ever made.  Next time I will know better!

I'm attempting to make cornish pasties.  Pastry made in the TMX of course !  Never made them before but have eaten plenty, I just hope they turn out well and that the kids like them.

Just made the beef stroganoff it was beautiful, my children loved it so much.. always a winner  :D
A quiet day today, usually I make at least 3 things ...

Today ive made "breakfast in a glass" from the vegetarian cookbook (with a few tweaks), 2 batches of Quirky Jo's Gluten free flatbread, which is really yum spread with cream cheese and chives and TMX sweet chilli sauce, Thai sweet potato and lentil soup and Isi's portuguese rolls (but made into a loaf).

Today everything I touched had home-grown produce in it.
The lemon cleaner, freezing the basil leaves and then I made a spinach quiche (it was supposed to be a rice & spinach pie but I forgot to add the rice so I figured it was a quiche then :-)) :-)))

I look forward to the day (not too far away now) where I can start growing my own produce JD.

Tonight I made a stuffed chicken meal cooked in the varoma in a foil 'boat' with rice in the basket and veggies on top.  After cooking I added the chicken juices to the bowl with some additional stuffing (which was ricotta, roasted capsicum, silverbeet & pine nuts) and some cornflour and reduced it down to a sauce.  Delicious, although hubby has suggested a couple of changes which I'll try out before posting the recipe.



For dessert, we had the edges of another batch of Amanda's Fudge Brownies with some whipped cream and raspberry coulis.  Totally decadent for a midweek dessert, but at least I now know what's on the menu for dessert next time we have guests!  I should have taken a photo - it was spectacular!
