Yes you definitely do strain. I couldn't wait either and tried it at just before three weeks. Was delish. Took some as a present to my daughters father in law who is Italian and he said it was very good. Haha. Bit brave (or stupid) giving it to an Italian. We were at an Italian restaurant at the time so did a taste test by ordering some from the bar. The commercial one was a bit more syrupy and smoother I think but taste wise mine was right up there

Shows how much I know about the correct consistency
- I have always boiled the sugar and water until it is slightly syrupy, therefore perfect over fruit as a dessert!!!! Uni what should the finished product resemble

Thats a hard one
well over the years i have been using less sugar so its not that thick, slightly thicker than vodka and for the colour it depend on the lemons that you use

Vivaroo, thanks for the washing powder note, i think i will stick with my omo matic.
Lemoncello sounds good might need to give it a go, i have just been given some lemons.

Uni, I have just done stage 1.
CP, love to know where to get alcohol - guess it would be so much cheaper than using Vodka?

Could be worth asking CP. I use vodka when "making" an anise liqueur (something tasting a bit like "Marie Brizard"- couldn't find it in OZ when I first arrived).
Thanks Uni and Jude59 for your limoncello recipes. I was just saying to my hubby this morning that I would like to "make" our own limoncello

I made Limoncello last year but the recipe I followed took a lot longer (80 days). I've still got some in the fridge. Here's the one I did, not in my words.

HIS IS HALF THE ORIGINAL RECIPE.
7 lemons
700ml bottle vodka
2 ½ cups water
2 cups sugar
Scrub the lemons really well with soap, hot water and a scrubby (to get the wax off - you don't have to do this if you have organic lemons or from your garden). Rinse well to get all the soap off.
Peel the zest off (no pith) with a sharp peeler. Don't get too neat about it - doesn't matter what the strips look like
Put the peel in a very large jar (2 litre bottle ) with ½ bottle of 100-proof vodka.
Place in a cool, dark place and let sit for 40 days.
At the end of that time, heat water and sugar together until the sugar is dissolved, let cool, then add to the jar along with the other half a bottle of vodka.
Return to the cool dark place and let sit another 40 days.
At the end of that time, strain out the lemon peel, pour into bottles and store in your freezer.
Serve iced cold and in small quantities. Very potent, very delicious.

Today I've made some apricot jam and have put some apricots and bananas into the dehydrator to dry.

I have never made it with vodka i use pure alcohol maybe that why its full of flavor with only 5 days of soaking
JD maybe you should leave it much longer
CP you can get it from the chemist if you a very good customer

I have learnt so much from the chat re limoncello - I didn't realise that anything other than vodka can be used
the recipe I use has 1 cup sugar, 1 3/4 cups water with 7 lemons and 700ml vodka
