Only some SD that I have had in the fridge for 48 hours.

This is the cake I made for DD’s birthday the other day. It’s very nice. Lots of steps but then quick and easy to assemble.

Invited a few friends over for a very simple new years day lunch - roast vege frittata, green salad and, the excuse for the get together, my summer berry pudding as no one had ever had it before and, once again, it was a great hit.

I've only ever had summer berry pudding a couple of times but it was beautiful.

Incredibly easy to make, Cookie.  Cheap to make as well when there are lots of berries around.

The birthday cake ;ooks delicious Cookie.

I am another one who has never had a summer berry pudding.

Today I have made meatballs in a tomato sauce and apricot chicken, these are for the freezer.  I also made Mango Fluff and an old fashioned Aberdeen Sausage to eat during the hot weather with some salad.

Also love Summer Berry Pud.
Today roasted a chicken and made an interesting Pumpkin/ chickpea/ tomato and spice mixture.  Ral didn’t like it but DD and I loved it.  Can make ahead and would go with anything.

Looks tasty, Chookie.

I made Cookie's Custard Fruit Cake ... my mixing bowl only just held the mixture - really liked mixing the custard in by hand, it had such a lovely consistency.  I am not sure that I cooked it for long enough, as it looks a bit uncooked in the middle, but it tastes good, so it may just be the consistency of the mix.  I would use less fruit next time.

I love the look of that Chookie.
Marina pop some custard onto the undercooked bits of cake and it's a lovely dessert.

That looks an interesting dish Chookie.  I would eat it but DH would screw his nose up.

This morning I have a casserole in the SC and a tuna bake in the oven.  I  also made  an egg & bacon pie last night  These are all for the freezer.  I wont be making anything else today as the kitchen is starting to get a bit hot.

Just made a big pot of chilli and loads of rice for the freezer.
