Lovely Judy. I made some Mini Panettone from this site. I made them mini, mini.
I also made a Paleo fruit cake from Quirky Jo’s site and soaked fruit for another couple of cakes.

Thanks ladies. Cookie I made the panettone recipe on here many years ago and took them to my neighbours whilst they were still warm. It was lovely, leftovers make great B & B puddings too. Love your mini, mini ones.

Still experimenting with recipes for Xmas day - latest try was leek and mushroom pie, not bad; it is definitely a contender.  Helps that it is very quick and easy!

Like you Marina I am still testing recipes for our GD.  Your leek & mushroom pie caught my eye and I was wondering if the filling is soft or firm.  The reason I ask is that I want to make a pithivier for her, it's like a round pasty/pie.  It has a roast pumpkin & spinach filling and I would like to put some sort of mushroom base under the pumpkin but am not sure if it would make the pastry to soggy.  I was hoping to get it made the day before rather than cook it on the day.  Thanks for any suggestions.

You are all so busy baking. I feel like I’m missing out. Think I need a kick up the backside to get me going. Maybe I could soak the fruit for Xmas puds.
The new neighbours have invited us for Xmas drinks. Probably should make something to take.

I made Quirky Jo’s Paleo Fruit cake. Instead of orange juice I soaked the fruit in sherry for 24 hours. It has a lovely flavour.

Today I used my biscuit press and made a heap of biscuits.

It is worth checking out the Guardian’s 20 best Christmas baking recipes.
Also made RTE chicken with creamy mustard sauce. The sauce is worth making to pour over steamed veggies.
The sherry would have taken it to a different level cookie, alcohol in cooking is great!
. Agree. I have a bottle of Apple Brandy. Will be sad when last crop used.

Marina, thank you  for the link.  Although that wasn't quite what I was looking for, it has given me a good idea.  I think I will add the spinach to the sauce and then layer it with slices of  pumpkin.  I subscribed to the site as it has some great meals that I will be able to use at a later date both for GD and myself.

No cooking here today - I had a long nap this afternoon. I was watching a thermomix thing on my iPad and fell asleep watching it. 😀😀😀

That looks a very nice recipe Marina, I’ve printed it out in case the kids are here for Christmas Day - not sure what they’re doing yet but DD would love this.  I love checking out your recipes with her (and sometimes me) in mind. I remember going over to that site before too.

I just cooked up all the veggies I had on hand today, steamed them in the varoma and made a parsley/cheesy sauce on the stovetop whilst they were cooking. I had some for dinner tonight, it’s been a while since I cooked up some veggies and it wasn’t too bad at all. 3 ramekins in the freezer and another meal in the fridge for tomorrow.
