Meat on the Menu cook book
« on: April 21, 2010, 09:35:17 am »
Well i have read it from cover to cover and think ( without trying any of the recipes),  that it is THE BEST publication from TMX so far.  Most of the recipes are uncomplicated and the ingredients are what we have available.  I can't wait to make some of the dishes.  I will report more as I test the recipes.   P.S. if I saw it in a book shop I would certainly buy it.  Congratulations to Tenina.

Yep - I'm in full agreement with this one too!
I made the Thai Beef Salad tonight and it was delicious (but will actually stirfry the beef in the wok next time as it sort of boiled rather than stirfried)
I've got about 4 recipes from this cookbook down for this fortnights menu plan so will let you know how they all go!

last night made the Chicken Peanut Curry (p.96) and it had 120g Fish Sauce. It was very nice but a little on the salty side - does this sound like a mistake to anyone (the bottle was 200ml so it was half a bottle?)

I've only ever "sploshed" with fish sauce without measuring, but that does sound like a lot.

I agree, have you emailed Tenina to ask her if it is a misprint.

well i had the bottle poised in the air over the TM wondering whether to add the full amount, and then I decided that the recipes should have been double checked before going to print and so I used what the recipe said. I can't remember using that much though when doing other Asian type cooking. I will email her and report back.

I agree that it sounds like far too much.  So can't wait to hear what HQ tells you.

Yes,  this sounds like too much fish sauce.  I would normally only use a tablespoon at most.

Haven't heard back yet, but pulled out the Sea Bounty cookbook and flicked thru and found "Fish Pie with Mashed Potatoe Topping" p56. Writing out my shopping list, it says 1 tsp Fish or Chicken Stock (see recipe Basic Fish Stock page 45) -- would hardly seem worth while to make or even buy a carton of stock...  as this is an older edition Sept 2008 does anyone know if there have been amendments to this book  ???

CP63 I have the Nov 09 edition and it still has 1tsp of fish or chicken stock, just sub for vegie stock if you don't want to make or buy the stock.

WOW - that's A LOT of fish sauce.  Oh well, not as bad as the cookbook that Penguin had to pulp with "ground people" in the ingredients.

I agree that it is a great book.  Though I think the Vegetarian book is pretty good too.

Don't have the book on hand, but you could easily leave that amount out or sub water.  Doesn't sound like it is going to do much in regard to flavour.
