Cooking dried chickpeas (garbanzo beans) in the Thermomix

Hello all - I'm a new TM user and haven't been able to find a recipe/instructions on how to cook dried chickpeas (garbanzo beans) in the TM.  Does anyone have any hints/recipes to share?  I want to cook the chickpeas from scratch for use in hummus.

Hi,

I'm actually in the process of doing http://en.wikibooks.org/wiki/Cookbook:Chickpea on the stove but I daresay it would be achievable in the tmx as well?  I just wanted to use my tmx for other things for 2 hours.... wishing I had a pressure cooker right now I can tell you! hehehehe

Ohhhh another gadget to clog up my kitchen! lol

Hi SMO404, welcome to the forum.  In our A Taste of Vegetarian TMX book it says to soak them overnight and that the soaking process will speed up considerably if you start with boiling water. Discard soaking water and only add salt AFTER legumes are fully cooked. A well cooked pulse should 'squash' easily between thumb and forefinger but a taste test is best. Chickpeas for a salad will require less cooking in order to hold their shape as opposed to chickpeas for hummus which clearly need to be creamy when pureed. It is preferably to use the basket at 90oC on speed 2-3 for 40-50 minutes. You can also cook them in the bowl at 90oC on reverse/speed 1.  If cooking longer than 35 minutes, check the water and add more if required.
Volume of water to pulses ratio is 2:1.  MC in place.

Hope this helps. I have never cooked pulses myself.

Judy have you tried the chick pea soup in the VAroma book-it has spinach in too? It's lovely.

I've decided to have a go at making hummus in my Thermomix.

When I followed the directions above, and in the Thermomix vegetarian book, for cooking chickpeas in the Thermomix.  Even after 60 minutes set at 90°C  (actual temperature measured with a really accurate thermometer was 92.4°C ) the chickpeas were still very firm, not at all "squishy".

Should the water just barely cover the chickpeas in the basket?

Is 90°C hot enough to cook chickpeas?

I have to add the obvious: Cooking chickpeas is so much easier in the Thermomix than on the stove! No need to check they're not boiling to much or simmering to low. I just put a separate timer on for 30 minutes to remind me to check the water level and add a touch more boiling water midway through.

Welcome to the forum Yareenbool.
Thermomixer cooks his chick peas for at least an hour 100c speed I.His instructions and method are included in this recipe here I would presoak them before you cook them  as suggested in the Vegetarian Cookbook.
