This was on the programme tonight:
1kg mixed fruit
2 cups fruit juice (any juice)
Soak fruit overnight. Next morning add:
2 cups GF self raising flour.
Mix and then bake at 120 degrees C for 2 hours, but check after 1 1/2 hours as every oven is different.
You can add a block of fruit and nut carob or chocolate to this recipe. I guess you would break it up and stir it in!
