Chicken skewers with satay dipping sauce

Try this recipe as a main or  as a finger food when entertaining.

Chicken skewers with satay dipping sauce.


Chicken skewers.

1 large chicken breast cut into bite size pieces
1- 2 red capsicums cut into bite size squares
3 spring onions, the white part cut into 2cm pieces
Handful of snow peas cut into 2cm pieces
10 skewers about 20cm long

Thread pieces of chicken, capsicum, onion and snow pea onto skewers in an alternating pattern.
Place a single layer of skewers on the Varoma tray and bowl, place 1L of water in the TM bowl and steam on Varoma temperature, speed 1 for 15 – 18 minutes.



Satay dipping sauce.


125g peanuts
75g sweet chilli sauce
70g sunflower oil
1 tbs sesame oil
1 tbs fish sauce
2 tbs soy sauce
100ml coconut cream
Juice of ½ lemon or lime
Small bunch of fresh coriander

Place all ingredients except the coriander in TM and blend for 10 sec on speed 6.
Add coriander and chop for 3-4 sec on speed 4.
Serve with chicken skewers.

Tips and hints
If serving as a main meal rice can also be cooked at the same time as the chicken skewers in the TM bowl.
Any vegies can be substituted for those in the recipe when making the skewers. (Pineapple workes great)

You could use any oil instead of sunflower.
The peanuts could also be substituted with a couple of big scoops of peanut butter.
The Fish sauce could be substituted with soy or anchovies as it is there as the salt component.


Judy: Kraft easy satay sauce recipe
1/2 cup crunchy peanut butter (I only have smooth but will add some chopped peanuts)
1/2 cup coconut milk (I'll be using some frozen leftovers)
1/4 cup water
2 tblspns sweet chilli sauce (using my TMX one)
2 tspns curry powder (might only use 1 tspn)
(I used carnation evaporated milk with a few drops of coconut essence in it and only 1 tspn curry powder.)

ES: Next time I would probably halve the sauce as there is plenty left over, and heat it in the microwave before pouring over the skewers.
Added extra Chilli to the sauce

Hi - I've fixed that - you can do it by just going back and MODIFYing the post - beware tho' each time you go back to modify it brings up another proforma!!

Thanks too for the recipe - the satay sauce sounds great.  Funny story - last xmas when I had just got my TMX I did lots of dips.  My mum refused to eat the satay sauce when it was passed around a few times.  I said that I had made it especially for her as I thought she liked peanut sauce - then when she found it had peanuts in it she just about devoured the lot!!

Yours sounds nice and easy - I cook mine - but it has onion and garlic - which need cooking.

Another easy satay sauce is from the Kraft website.  Very tasty too. Just peanut butter, chilli sauce, coconut milk.
May all dairy items in your fridge be of questionable vintage.

oh gosh they sound great!

fiddly but would make the chicken go further so i might make these for our christmas eve party this year!

Mmm yummy! wasn't sure about the sauce, required me to buy a lot of things I don't normally stock/use but wanted to give it a go.

I made the sauce then set it aside while I cooked the rice and steamed the skewers -which cleaned the bowl from the sauce at the same time ;)

Gave it a 5/5 (and I have leftover sauce for another time- yay!)

It is a great sauce - but always a worry when you have to buy unusual ingredients - I am sure you'll use them now.  :-*

Now's the time to do it Cookie1 with this heat we are having.  Mine is on the menu for tomorrow night and I have googled that Kraft easy satay sauce recipe to try and I have all the ingredients for that whereas I would have to make a special trip out to get things for riv_mum's sauce. For anyone interested here it is -

1/2 cup crunchy peanut butter (I only have smooth but will add some chopped peanuts)

2 tspns curry powder (might only use 1 tspn)
Combine everything in the TM bowl until smooth and heated through. Probably on 90o for a couple of minutes on soft speed?

Cookie1 how much curry powder do you use when you make this one please?

JD - you could chop and saute an onion and a garlic clove with some oil before adding the other ingredients too.

DO you have fish sauce or anchovies (if you like) to give some extra flavour?

I'd use half the amount of your chilli sauce and curry powder possibly and add some soy if you have (ketcap manis is best or just add some sugar with the soy)

You will probably read this after you have finished dinner - sorry, sure it will be good.
