Raw Vegetable Salad

Name of Recipe:Raw Vegetable Salad from the Polish cooking class held in Adelaide  5/5/10
Number of People: heaps
Ingredients:
250g raw cabbage cut into large chunks
60g carrot, cut into chunks
50g dill cucumber
50g red capsicum
50g green apple
1/2 red onion, peeled
small bunch parsley
Juice of 1/2 lemon
1 tsp sugar
S & P to taste
2-3 tbsp olive oil



Preparation:
Place all ingredients into TM bowl and chop for 8 seconds on speed 4 using the spatula to assist if necessary.
Serve immediately.   Check after 6 seconds to ensure you do not over-chop.

Tips/Hints:
I made 1/2 quantity and although I didn't have any capsicum or dill cucumber to use, it was a lovely salad and my guests enjoyed and commented on it.

passionflower - This needs to get up to the top as is a fabulous tasting recipe and soooo easy!! We had it tonight with some spinach and feta muffins.

Amanda - Add some chopped feta, some seeds and some nuts and you have a whole meal!

MJ - This was just delicious! I didn't have capsicum and I don't think it needed it. Definitely needs the parsley, that was a lovely addition. I made the full amount which was half a cabbage and half a green apple. used cornichons. I'd suggest chopping them finely first as they didn't chop terribly well.

The method started with my favourite words - "Place all ingredients in TM bowl & chop"   ;D ;D ;D so already it's a winner.

Glad you liked it Monica.  Yes now is the time to start thinking of salad recipes and we have quite a few from which to choose these days.

I will try this too sometime this week (half recipe).  I bought some dill cucumbers today when out shopping.  ;D

This is the silly question for the day .... by dill cucumber, do you mean the small pickled cucumbers in jars or is there a specific fresh cucumber called "dill"?

Yes they are the picked ones in jars, not the gherkins but you can use gherkins if you prefer (as I do).

I'll probably use the dill ones. One is sweet and one sour. I had never tasted the sour ones until I met DH and he hadn't had the sweet gherkins. Aussie verses European upbringing.
May all dairy items in your fridge be of questionable vintage.

A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

could I do this a few hours before leaving out the wet stuff and then mix it through just before serving?  I thought I  might make this in the afternoon and take it up to sis in laws for Xmas eve?

Guess you could auds, or make the complete salad but leave the apple out (chop it by hand later) until the last minute as it will go brown.
