After 6 yrs of thinking about it, I have bought my thermomix.  Have had it a week, slowly getting into it and looking forward to learning new stuff.

Welcome, I admire your ability to think for 6 yrs before getting a TMX. I lasted 6 months and love having mine as I'm sure you will too as you get the hang of it and start trying all the wonderful recipes you find or read about on this forum.

Hi there and welcome! Wow, a 6 year wait! I'm sure once you get used to having it, you'll wonder why you waited so long.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I live in Perth.  Have been enjoying getting the hang of the Thermo, this weekend I am planning on trying out some cakes and sweet treats.  I have made risotto a couple of times, the quantities are quite big, does anyone freeze risotto successfully?  Have had conflicting info. any tips?  Any good muffin recipes?

I haven't found that risotto freezes well. You can make little risotto balls that you roll around chunks of mozzarella and deep-fry. I think you could also make risotto 'patties' that you could shallow fry.

Try halving the recipes, they should still work

Better to make samller amounts rather than trying to freeze it - but you can use to make arancini as MJ suggests, or spread out and cut into pieces like polenta and then shallow fry it.

If you want to freeze and make risotto, then only half cook it, spread it out very well and cool quickly.  Then you can thaw and finish the cooking later - that works fairly well.
