Turkey with Mushroom (with photo)

Hi everyone
This is one of the recipes in my blog that judydawn asked me to translate. I hope you like it.
Turkey with Mushroom:
4 people
Ingredients:
10g parsley (only leaves)
1 onion
30g olive oil
800g turkey breast
Flour
50g white wine
Salt, black pepper
50g milk
450g mushrooms
Preparation:
Chop parsley leaves for 7 seconds on Speed 7. Set aside
Chop onion for 5 seconds on Speed 7
Add olive oil and cook for 3 minutes at 100°C on Reverse/Soft Speed
Cut turkey breast into chunks.
Put some flour in a bowl, add also turkey breast pieces inside and coat with flour lightly
Add flour-coated turkey pieces in TM bowl. Add also wine, salt and black pepper. Cook for 10 minutes at Varoma Temperature on Reverse/Soft Speed
In the meantime chop mushrooms into slices. Add mushrooms together with milk in the TM bowl and cook for 15 minutes at Varoma Temperature on Reverse/Soft Speed
Put it into serving plates and sprinkle with some parsley
Buon appetite.

Tips/Hints:
I modified the original recipe by using fresh mushrooms instead of canned ones and adjusted cooking times accordingly.

JD - loved it. My changes were -
only used 20g olive oil, 280g chicken thigh meat cut into 4cm pieces and only 220g mushrooms thinking I would use the excess sauce in another meal later. It was a perfect meal for 3, not short on chicken nor excess sauce. After adding the mushrooms and milk, I cooked it for 15 mins/90
o
and turned up to speed 1 halfway through the cooking. Thanks for your conversion.

@judydawn; chicken would be great as well I believe. In fact, generally I prefer chicken to turkey

Thanks MJ, that set doesn't get used much these days - tend to just use the white one. When I used to have dinner parties I used it but now I tend to have people to lunch instead of dinner. The meal was lovely and it reminded me of a recipe in the WW Chinese Cooking Class book from years ago called Chicken and Almonds so, with a few changes and additions I have rewritten that recipe and will post it when I get around to doing it. I love a recipe you can take and run with.

can you explain what this means? is it something about losing vitamins over a certain temperature perhaps

Not so much about losing vitamins, but just cooking it more gently. You don't keep the heat up on the stove when cooking, so why not turn the TMX down a bit too - even if it takes a little longer?

I agree with Thermomixer. However, what I have been told by TM consultant here in Italy is that 100ºC doesn't exactly work as full 100ºC. That's why Varoma Temperature exists. In Varoma it really keeps boiling and it doesn't reduce back. Instead 100ºC has a kind of safety system behind so that it would cook in a more healthy way. Since then I've always used 100ºC

I made this a while ago and have been waiting desperately for specials on turkey breast at my local supermarket ever since! I absolutely loved it, thank you farfallina
