Ricotta and Smoked Salmon Flan (with photo)

Hi everyone

This is from "Io e il mio Bimby" recipe book which is Italian EDC. I hope you like it as much as we do


Ricotta and Smoked Salmon Flan:
Ingredients:

12g gelatine leaves
50 parmesan
100g fresh cream
400g ricotta cheese
10 basil leaves
Salt, black pepper
200g smoked salmon (sliced)


Preparation:

Soak the gelatin leaves in cold water for 10 minutes
Cut parmesan into chunks and grate for 5 second on Speed 7
Add cream and then well-squeezed gelatin leaves. Cook for 5 minutes at 70°C on Speed 3
Let it cool down for half an hour
After cooled down, add ricotta, basil leaves, salt and black pepper and mix for 10 seconds on Speed 5.
Cover a bowl (18-20cm diameter) with cling film (in a way that cling film comes out of the bowl and hangs down)
Cover inside with 100g smoked salmon. Pour over the half of the mixture and flatten with spatula
Add the remaining 100g smoked salmon in the TM bowl. Mix it for 10 seconds on Speed 5
Pour the mixture on the top, flatten with spatula and cover nicely with cling film which hangs down on off the sides of the bowl.
Let it rest in the fridge for minimum 3 hours before you serve

Tips/Hints:

I modified the original one a bit. In original recipe they use 250g smoked salmon, white pepper and 10g gelatine leaves

Thanks - I love thie presentation of this dish.  I used to make something similar and this makes it easier.

Gosh farfallina, you go to so much trouble for Halloween - I would never get rid of all that food you have made in a month  ???
What do you do with it all, how many kids knock on your door looking for a treat - must be dozens of them :o :o
Halloween isn't that big in Australia although it is growing slowly. Some years we get no kids knocking, some years just the odd couple of kids and one year we got 6 which was a record.  I usually have something in the pantry I can give them - it would be my luck if I cooked something special, no one would turn up  ;D ;D

over here it depends where you live but our new neighbourhood well the past two years its very quiet but I think thats mainly due to high gates and fences and video phones...much more popular here when they can knock on your front door and if you have decorations up otherwise not really celebrated at all..

Judy we really prepared very much
We organized a Halloween dinner on the 30th

We were 17 with an extra guest (Thanks God I had 17 longtail mouses by chance;) )
Andrea, our friend, likes Halloween for some reason, dont' know why exactly :)
Yes, let's say we did it for children! (off the record, there were 3 children only :) )

We took care of crackers, starters and sweets. Stefano and Andrea's mothers took care of rest of the cooking, fish, lasagne and side dishes
Also guests brought cakes so we really had too much!

We are invited for another dinner tonight which wasn't organized by us ;)
We will take leftover cakes there, I hope they manage to finish :)

Farfallina, you have friends who don't mind having fun!  I'm not into the Halloween thing (not part of my French upbringing, i guess  :)) but if it's just another excuse to hold a party and do something a bit out of the ordinary I'm all for it!!!
