I made a half batch of this recipe today and it worked well. I used 2 small eggs and substituted the nutmeg for mixed spice which was yummy. I chopped the rhubarb quite small as the cooking time was reduced by 20 minutes. For the pie crust I used Chookie's Belgium Lemon Teacake crust. It filled my smallest pyrex pie plate perfectly and still made enough to serve 8.  Such a lovely recipe Nay! :)

Haven't had rhubarb since I was a kid. Don't seem to see in it the shops any more. This looks like a great recipe though. Anything served with lashings of cream has to be good. Going to ask the local shops about rhubard as I really would like the kids to try it.
