Minced Meat with Crumbs (with photo)

I found this recipe in one of my Turkish food magazines. I've adapted it to Bimby recently
I hope you like it as much as my husband and I :)

Minced Meat with Crumbs:

Ingredients:

Dough:
150g flour
150g finely milled cornmeal (maize flour – polenta)
65g EVO
40g yogurt
100g ricotta
5g salt

Meat sauce
10g parsley (leaves only)
1 onion
2 tomatoes
1 carot
35g corn oil
250g minced meat
40g pine seeds
40g boiling water
20g currants
Salt, pepper

Preparation:

Sift in flours. Add EVO, yogurt, salt and ricotta. Blend for 1,5 minutes on Speed 4. At the same time mix with TM spatula through the hole of TM lid
Wrap dough with plastic film. Put it in freezer for 1 hour at least

Chop parsley leaves for 10 seconds on Speed 6 and set aside
Put quartered onion in TM bowl and chop for 5 seconds on Speed 4
Add quartered tomatoes and chop for 4 seconds on Speed 5. Set aside

Cut carrot into very thin slices with a veggie cutter and then cut into pieces for 2 seconds on Speed 5. Set aside together with onion and tomatoes

Warm corn oil for 1 minute at 90°C on Speed 1
Add minced meat and cook for 4 minutes at 100°C on Speed 1
Add onion, tomatoes, carrot, pine seeds and boiling water. Cook for 10 minutes at 100°C on Reverse/Soft Speed
Add salt, pepper, currants and parsley. Mix it for 5 seconds on Reverse/Speed 3
Insert TM basket inside, drain excess liquid of the sauce
Let it cool down a little

Halve the dough.
Grate the half into 11x31cm cake tin with a grater
Spread the meat sauce over
Grate the other half of the dough on the top.
Bake it in preheated oven at 170° for 35-40 minutes.
Serve warm

Very interesting - Kinda like Lasagna? Could you grate the dough in the TMX??

I can't say that it is much similar to lasagna because it has a crumby dough and it is drier. In lasagna there is abundant mozzarella and bechamel that makes it smoother. Besides, I never buy or prepare lasagna because my brother in law has pasta fresca shop just 50meters from my home and they make the most delicious lasagna in the world! So I am lucky!  ;D

Grating in Thermomix?  ???
I didn't try because I didn't want to risk that it grates and then the crumbs stick back together. If the dough had warmed and softened, I would have had to put it back in the freezer to be able to grate it. So I simply used a traditional grater (My had 3 sides. I used the surface with bigger holes)

Well, given a second thought.... :-)) if the dough is cold enough, you may be able to grate it in Thermomix, not the whole dough maybe but divided in 4-5 parts piece by piece.
