Seems to be a few recipes around using white chocolate at the moment but this one is different so I have decided to post it. I found it in a That's Life magazine at the salon but forgot to write down the proper name of it so it is now called something different probably. I have changed the quantities of some items to suit what I had in the pantry, cooked them for longer and they worked well. No, I have not forgotten to put any egg in them, there was none.
3 teaspns instant coffee dissolved in 3 teaspoons hot water
130g white chocolate
180g butter (I used 1/2 butter and 1/2 margarine)
100g brown sugar
200g condensed milk
290g SR flour
Preheat oven to 180
o
C and line 2 trays with baking paper.
Grate the chocolate pieces
6 seconds/speed 8.
Set aside.
Beat the butter and sugar
20 seconds/speed 3.
Wipe down sides with a spatula and repeat if necessary.
Add coffee mixture and condensed milk and beat
20 second/speed 5.
Add flour and chocolate & mix on interval speed for
20 seconds
. (Thanks for this hint MJ)
Take level tablespoonful of the mixture and with wet hands, they will roll into balls the size of walnuts. This is messy but will be worth it!
Place on the trays, leaving room for spreading and flatten lightly with a wet fork.
Bake 15 - 17 minutes when they should just be developing some colour (keep your eye on them though as all ovens are different). Leave on the tray for 5 minutes then transfer to a wire rack to cool completely.
Makes 32 biscuits 7cm in diameter.
The original recipe was then drizzled with extra melted white chocolate but they are delicious enough without anymore calories.

faffa 70 - I have just finished making these as well JD and I must say they are divine. Thank you.
CP - they taste delish. Must admit I used a whole block of white cooking chocolate (180g), and just added a hazelnut to the centre. as I'm not a coffee person. I love that slight flavour that comes through and mingles with the chocolate. Cost wise, if you make your own condensed milk they really are not that expensive. Thanks JD for the great recipe.

Bedlam - These are delicious Judy. I used a nespresso shot instead of instant and unfortunately I over grated (read melted into a lump) the white choc. I love the select white cooking choc but it is quite soft.
ES - I made these tonight but I was a bit concerned that the kids wouldn't like the coffee and I couldn't bear to see half a tin of condensed milk go to waste so I made another batch substituting the white chocolate with dark chocolate and cocoa for the coffee. So now I have about 9 dozen biscuits and after much taste testing, the kids have decided that they prefer the coffee ones (and so do I).

thanks JD, these sound nice with the coffee/white choc combination. flying out to Bali tomorrow, so will make them when i get back

Thanks JD was just looking for another "treat" biscuit recipe and have the chocolate from the other recipes so will give them a try.

I've just finished eating another one Kathryn, they are lovely and that little hint of coffee comes through too. The original recipe used 200g choc in the mix and 100g to drizzle over the top so look at all the calories we are missing out on by only using the quantity I had in the pantry. Just shows you
can
lower quantities and not affect the flavour and texture of some things.

I know, it is the same with the lemon poppy seed ones that I posted - I never got to put it on even though I did intend to , everyone loved them as they were so made them cheaper to make also

JJD, these look really nice, and the touch of coffee is different.

Had leftover ingredients after making Roxy's biscuits so made these as well. These are lovely too JD. Mine spread out quite a bit even after I left a lot of room for them.
