Chocolate Macadamia Spread
« on: June 19, 2010, 06:25:42 am »
Hi All,

I tired the Chocolate Hazelnut Spread recipe from the EDC and mine was grainy too, so seeing I LOVE macadamia nuts and had some in my fridge thought I might try and change the recipe a little!!
So using the same recipe I just made a few changes.

Chocolate Macadamia Spread

80g Sugar
60g Macadamias
100g Dark Chocolate, broken into pieces
70g Soft Butter
100g Milk

Put Macadamias in TM bowl and Dry roast for 6-8 mins on speed 1. Set aside.
Let TM cool down. Put sugar in TM bowl and pulverise for 8 - 10 seconds on speed 9. Set aside.
Put chocolate in TM bowl and mill for 8 - 10 seconds on speed 8. Set aside.
Put macadamias in TM bowl and grind for 15 seconds on speed 8 (or until it looks like a paste, not just meal!!) Add the sugar, chocolate, butter and milk and heat for 6 minutes at 50 degrees c on speed 3. Place in sterilized jars and place in the fridge.
ENJOY!!!

This is so creamy and yummy. Mine is a little stiff when I get it out of the fridge, so might add a little more milk or butter next time. My 17yr old DS LOVES it, I find teaspoon holes in it when I go to the fridge..... that's how he has been eating it, not even on bread sometimes!!!

Thanks for that terstoo.  I have plenty of macadamia nuts and don't like the idea of having to get the skin off those troublesome hazelnuts plus the fact it seems to be grainy doesn't appeal to me and would certainly not go down well with the grand-kids. Will try this one and add a little more milk as you suggested

Yummo, I am going to try this once my Nutella is all gone. My last batch was smooth, I will have to revisit what I did. Not sure if I posted it on the thread or not  ??? ???

I made this not long ago so have to wait for it to firm up before I try it (nice when I licked the spoon though).  I had no butter and couldn't be bothered going to the shop so I used margarine.  Because that doesn't set as hard as butter I decided against adding anymore milk though so I'll get back to you when I have tried it. If it stays runny I'll  just use it as a chocolate sauce or flavour a milk drink with it.

This sounds as though it would taste really nice. I have trouble resisting peanut butter I would have no chance with this.

This is really nice Tersoo, mine is runnier than the bought variety of Nutella but not too runny to spread on bread.  I will use butter next time though (or maybe half and half to ensure a nice, spreadable consistency).  Thanks for posting your version.

Good work terstoo - the macadamias sure would make it smoother.  Yum

I had brought some more hazelnuts to make more 'nutella' but this sounds much tastier!  Now what do I do with the hazelnuts?   ;D

Thanks Thermomixer.  Not sure how that one would go with the egg substitute?  We are a egg free house due to a DD with an allergy.  :(

Perhaps some hazelnut shortbread?

Sounds yum!

I find I can add quite a bit more milk with the hazlenut one and it is still a great consistancy. The best best best thing though about these spreads is the custard you make at the end so as not to waste any gorgy spread left in the bowl ;)
