This is a very spicy but delicious recipe. I think I cooked my limes a little longer than required (they are quite thin skinned and bright orange) as they were quite squishy by the end of the steaming. The recipe says to add heaps of salt and allow limes to sit for a few days before very gently rinsing. I found the limes were still coated in salt (maybe because I used quite large grained salt), so rinsed it quite vigorously to get rid of the saltiness. I wonder if you could do without the salting step all together. I also thought that 100g of my chili powder would cause the thermomix to meltdown, so added about 100g of chili paste instead (a commercial one). Otherwise followed recipe as described and made enough to fill two 585g jars. It has plenty of bite and we'll be enjoying this for months to come. Definitely worth a go if you have a glut of limes
